Today, I’m sharing how to make perfectly thin & tender, authentic crepes at home. Homemade crepes can be tricky to make without knowing the essential tips. I am addressing all the troubleshooting so you can successfully make 5-star quality crepes at home.

???? The ingredients to make crepes
Enough amount for about 14-17 layers of crepes (25cm | about 10-inch diameter)
• All-purpose flour: 150g | 5.3oz (1 1/6 US cups)
• Granulated sugar: 50g | 1.7oz (1/4 US cup)
• Salt: 1/2 tsp
• Egg: 200g | 7oz (About 4 large eggs)
• Unsalted butter: 50g | 1.7oz (About 4 Tbsp)
• Whole milk: 500g | 17.6oz (2 US cups)
• Dark rum: 1 Tbsp (or 2 Tbsp if you love it!)
• Melted butter for a pan: Some
** For best results, measure ingredients with a scale. All recipes are designed with weighed ingredients using grams/ounces. Cup measurements are provided for your convenience. **

2 minute Eggless Fluffy Pancake Recipe | बस 2 मिनट में बनाइए बिना अंडे के पैनकेक | Chef Sanjyot Keer
Full written recipe for Eggless pancake
Prep time: 10-15 minutes
Cooking time: 2-5 minutes (one pancake)
Serves: 10-12 pancake depending on the size
Ingredients:
MILK | दूध 1 CUP (WARM)
VINEGAR | सिरका 2 TSP
REFINED FLOUR | मैदा 1 CUP
POWDERED SUGAR | पीसी हुई शक्कर 1/4 CUP
BAKING POWDER | बेकिंग पाउडर 1 TSP
BAKING SODA | बेकिंग सोडा 1/2 TSP
SALT | नमक A PINCH
BUTTER | मक्खन 2 TBSP (MELTED)
VANILLA ESSENCE | वैनिला एसेंस 1 TSP
Method:
To make the batter we need to first make buttermilk, mix milk & vinegar, rest it for 2-3 minutes, your butter milk is ready.
For batter, take a bowl, add refined flour, powdered sugar, baking soda, baking powder & salt, mix well and further add the prepared buttermilk, butter & vanilla essence, mix & combine well, use a whisk & whisk it well, the consistency of the batter should be a little fluffy, do not over whisk, your pan cake batter is ready. Transfer this batter in a piping bag to get perfect round shape pancakes.
Use a non-stick pan and heat it well, once heated well, cut the piping bag keeping the hole 2 cm in diameter and pipe it over hot pan, you can keep the pan cake size as per your preference, keep the flame to medium heat and cook for a minute on one side, carefully flip and cook for the same time on the other side until golden brown in colour.
Your eggless fluffy pancakes are ready. Serve it by drizzling some maple syrup or honey or any spread of your choice, you can serve it with some chocolate spread and dust some powder sugar.

FOR THE PANCAKE MIX
INGREDIENTS
15 scoops (500 g) vanilla whey/casein blend 50/50 blend. I mix whey and casein together myself.
4 cups (400 g) oat flour
1 ⅔ cups (200 g) tapioca flour or cornstarch
5 tsp (20 g) baking powder
INSTRUCTIONS
Mix all the ingredients together so no clumps are present. For the protein powder I use 250g of vanilla whey and 250g of vanilla casein.
Store the mix in a ziplock bag or container.
FOR THE PANCAKES.
INGREDIENTS
1/4 cup (56g) Pancake mix
-OR-
¾ scoop (25 g) vanilla whey/casein blend 50/50 blend. I mix 12.5g of whey and 12.5g of casein together
¼ cup (20 g) oat flour
1 ⅓ tbsp (10 g) tapioca flour or cornstarch
1/4 tsp (1 g) baking powder
¼ cup (60 g) liquid egg whites
⅓ cup (75 g) plain nonfat Greek yogurt
1-2 tbsp (25 g) water
INSTRUCTIONS
1. Mix all the dry ingredients together so no clumps are present. NOTE: I have tested this with only whey protein and it doesn't turn out as well. Only casein will work but you may need more water in the batter. The 50/50 blend is best.
2. Add in the wet ingredients and mix thoroughly.
3. Heat a griddle/skillet on medium heat and spray with oil. Add the batter and cook for a couple minutes, then flip.
