1 c Butter; softened, room temp
2 c Sugar; sifted
3 1/3 c Flour
4 ts Baking powder
1 c Milk
1 ts Vanilla extract
1/2 ts Orange flavoring
6 Egg whites; beaten until sti
1 c Orange marmalade
** fluffy orange frosting 1/4 c Sugar
1/2 ts Cream of tartar
1/8 ts Salt
2 Egg whites
1/4 c Cold water
1 ts Orange flavoring
1/2 ts Vanilla extract
Recipe by: FWDS07A Pat Dwigans Fluffy orange frosting recipe follows cream butter and sugar well. Add flour and baking powder and salt alternately with milk. Add vanilla and orange flavoring. Finally fold in the stiffly beaten egg whites. Divide equally between 3 9 inch layer cake pans greased and floured. Bale 375 about 20-25 minutes or until it tests done. Turn out to cool for at least 20 minutes before turning upright. When layers are cool assemble cake as follows Put bottom layer on a plate and spread lightly with orange marmalade. Put second layer upside down on bottom layer and spread it with marmalade, then put the third layer on the cake top side up. Spread generously with fluffy orange frosting. Orange frosting: Fill a large saucepan with about 3 inches of water. Heat until water begins to simmer. Turn heat off. Then in a 2 quart straight sided heat proof bowl combine the sugar, cream of tartar, salt, egg whites and cold water. reheat water in pan until it is again simmering, but not boiling. Set bowl in hot water and beat with rotary beater until frosting stands in peaks about 5-7 minutes. Remove from water add orange flavoring and vanilla and beat a few minutes longer to blend and to firm up the frosting -----

These eggless, dairy free Orange Blossom Water Cupcakes are perfect for afternoon tea or anytime of the day.

✅ Ingredients:
3/4 cup (150 g) Superfine (Granulated) Sugar
1 cup (240 ml) Water, room temperature
3 tbsp (45 ml) Orange Blossom water
1/3 cup (80 ml) Vegetable Oil
1+3/4 cup (245 g) All-Purpose Flour
1 tbsp (12 g) Baking Powder
1 tbsp Orange Zest
Bake at 350oF (180oC), rack middle position, 18-20 minutes, or until toothpick inserted in the middle of cake comes out clean.
* It is very important to PREHEAT the oven. Bake when oven reaches the right temperature.
* All oven are not the same. If toothpick inserted in middle of cake comes out clean, cake is done.
* Mix dry ingredients and wet ingredients until JUST combined and dry flour is no longer visible. Do not overmix the batter or the cake will be dense.

Chef Clodagh McKenna’s Orange Blossom Summer Sponge Cake with Kerrygold Butter
A unique twist on summer desserts, this easy cake brings together flavors of orange blossom, fresh rosemary, and ripe strawberries. Try it as the perfect ending to an outdoor meal, or as the centerpiece for your next celebration. It’s the latest creation from Chef Clodagh McKenna’s Summer Supper Series.
INGREDIENTS:
For the cake:
15.5oz Kerrygold Unsalted Butter, softened
15.5oz superfine sugar
8 medium eggs
15.5oz self-raising flour, sifted
3 teaspoons baking powder, sifted
4 tablespoons orange blossom water
3 sprigs of fresh rosemary (optional)
For the filling:
28floz whipping cream
1 tablespoon orange blossom water
3oz confectioners sugar (plus extra for dusting)
21oz strawberry jam
For decorating:
1 orange, zest
12 fresh strawberries
confectioners sugar
DIRECTIONS:
Preheat the oven to 350°F. Grease three 8in cake tins. Line the bottom of the tins with a circle of baking paper. Place the sugar and butter in a mixing bowl, and cream together until light and fluffy. Crack the eggs in one by one, with your mixer on medium speed. Next, sift in flour and baking powder and pour in the orange blossom water. Mix until combined. Spoon the batter into the three baking tins and tap the sides to release any bubbles. Optional: tear off the leaves of a sprig of fresh rosemary and line baking tins with it before pouring over the mixture. Bake for 40 minutes or until the sponges are golden brown. Check by inserting a skewer into the middle of the cake; if it comes out clean the cake is cooked. Remove from oven and allow to cool in tins for about 10 minutes before removing them from the tins and transferring them to a wire rack. Meanwhile, lightly whip the cream, orange blossom water and confectioners sugar together. To assemble, place one of the sponges top down, and spread with the strawberry jam, followed by half of the cream, repeat with the another sponge. Place the third sponge top facing upwards. Assemble the strawberries on top and dust with confectioners sugar and the zest of one orange.

Flourless Orange Cake
This is a wonderful moist Orange Cake that's literally bursting with orange flavour in a way that you can only achieve using whole oranges - rind and all! Boiling the oranges removes the bitterness from the pith. Made with almond meal instead of flour, it's a terrific easy cake to take to gatherings because it's gluten free so everyone can enjoy it!
