How To make Old Fashioned Macaroni & Cheese
3 1/2 c Uncooked elbow macaroni (12
-oz.) 1/4 c Butter
1/4 c Flour
1 ts Salt
3/4 ts Dry mustard
1/2 ts Pepper
-Few dashes hot pepper sauce 3 1/2 c Milk
5 c (20 oz.) shredded cheddar,
-divided Cook macaroni in boiling salted water until almost tender. Meanwhile, in a small saucepan, melt butter. Stir in flour, salt, mustard, pepper and hot pepper sauce. Cook and stir until smooth. Drain macaroni; combine with butter mixture in a large bowl and mix well. Stir in milk and 4 cups of cheese. Pour into an ungreased 13x9x2" baking dish. Cover and bake at 350 degrees for 45 minutes or until bubbly. Sprinkle with remaining cheese; let stand 5 minutes before serving. HOW TO MAKE “OLE SKOOL” SOUTHERN BAKED MAC N CHEESE!!!
Ingredients:
32 0z chicken stock (or more depending on how much you’re making)
3 1/2 cups elbow pasta
8 cups of cheese of choice
2 cups whole milk
1 1/2 cup heavy cream
3 eggs
3/4 cup sour cream
Seasonings such as paprika, salt , pepper ( taste as you mix and adjust the seasonings! )
1 stick of butter ( plus a little
More to grease the pan)
Notes* only cook the pasta until it still has a little bite to it about 7-8 minutes .. the pasta will continue to cook once it is placed in the oven to bake *

OLD SCHOOL MACARONI AND CHEESE RECIPE
Cook 1# of mac pasta in salted water
FOR CHEESE SAUCE:
Add 1 quart of milk to pot and bring to a boil
Season with salt and white pepper
add 1 cup of roux(flour and melted butter) and add to hot milk mixture and cook until thickened
Add
8oz cup cream cheese
8oz cup Velveeta cheese
8oz cup jack cheese
12 oz mild cheddar cheese
Add to thickened milk mixture and incorporate completely
Add cheese sauce to cooked mac pasta and pour in baking dish
Top with sharp cheddar cheese and melt in oven for 20-30 minutes until golden brown
CHEESY AU GRATIN POTATOES
RECIPE
3 lbs large diced cooked Yukon gold potatoes
FOR CHEESE SAUCE:
Add 1 quart of milk to pot and bring to a boil
Season with salt and white pepper
add 1 cup roux9flour and melted butter) add to hot milk mixture and cook until thickened
Add 4 oz cream cheese
4 oz pepper jack cheese
4 oz velvetta cheese
4 oz jack cheese
1 cup mild cheddar cheese
Add to thickened milk mixture and incorporate completely
Add cheese sauce to cooked potatoes and pour in baking dish
Top with sharp cheddar cheese and melt in oven for 20-30minutes until golden brown

The cheeses are especially important in this recipe. Try to use premium cheeses if you can - you’ll taste a difference. The cheddar gives the dish that distinctive cheese flavour while the Swiss adds subtle earthy notes. The mozzarella adds a lovely creaminess when the dish bakes.
