1/2 cup of softened butter
1 egg
3/4 cup of sugar (1/2 white sugar 1/4 brown sugar)
1/4 teaspoon of cinnamon
1/4 teaspoon of nutmeg
1 teaspoon vanilla
1 cup of oats
1 cup of flour
bake for 10 to 12 minutes

No bake cookies are one of the easiest cookie recipes you can make. They're a blend of 7 simple ingredients and no flour or eggs are needed! Just boil everything in a pot, scoop it out onto a baking sheet, and let it cool.
A combination of sugar, milk, butter, chocolate, oatmeal, almond butter and vanilla extract, they come together fast! No bake cookies are a classic and while they should be easy and foolproof, it seems many still run into issues when making them (i.e. too soft and gooey or too hard and crumbly). Steel-cut oats are one of the least processed types of oats available and are denser and chewier than rolled oats or instant oats. They also contain about double the amount of fiber of rolled oats. Fiber is important for healthy digestion and easy bowel movements.
Usually, steel-cut oats need to be well cooked so you don't break your teeth. There are many steel-cut oat cookie recipes that call for the oats to be cooked first. But in this recipe, you can use them straight from the bag, which saves a lot of time and trouble.
In addition to the oats, this steel cut oats breakfast cookie recipe calls for mashed banana and almond butter to provide some much-needed liquid in the recipe.
Bananas are a good source of fiber, potassium, vitamins B6 and C, and other antioxidants and phytonutrients. Ripe bananas are easier to digest and have higher levels of antioxidants as they ripen.
Almond butter is a food paste made from raw or roasted almonds. Compared with peanut butter, it's higher in calcium, potassium, manganese, and monounsaturated fat but lower in protein. Feel free to substitute your favorite nut butter or peanut butter for this.
For spice and crunch, you'll add cinnamon and chopped walnuts (or your favorite nut). It is loaded with antioxidants and helps lower blood sugar levels and inflammation. Walnuts have been found to reduce the risk of cancer and diabetes, and may help lower inflammation throughout the body.
