Ingredients:
2 cups of peeled mung beans
150 g pork
150 g blanched bean sprouts
150 g of chopped cabbage kimchi
5 green onions
1/4 red bell pepper
1/4 onion
1 egg
1 tsp or 1/2T salt

Korean Mung Bean Pancake (녹두 빈대떡, NokDu BinDaeTteok) | Aeri's Kitchen
???????????? Mung bean bindaetteok is my all-time favorite Korean pancake. The unique thing about this food is that the batter is 100% ground mung beans without any wheat flour. So, if somebody can’t eat wheat and wants to try Korean pancakes, this is a great option for them. Traditional mung bean pancakes have fern brake and mung bean sprouts in the batter; however for this recipe, I will skip them since I prefer mine without them. You can make it either way by following the “Option 1 – Kimchi Style” or “Option 2 – Traditional Style” methods. This is delicious and healthier than normal Korean pancakes.

Mung Bean Pancakes (Bindaetteok: 빈대떡)
Korean mung bean pancakes, called bindaetteok, are a delicious, savory, irresistible meal in themselves. Packed with ingredients: ground mung beans, rice, kimchi, pork, vegetables, egg, and full of seasonings, they are hearty and unforgettable.
I make the pancakes in big batches and keep the leftovers in the freezer, wrapping them individually in plastic wrap and then putting the wrapped pancakes into a zipper-lock bag. Whenever I want one or two as a quick meal, I thaw them out and pan fry them with a few drops of vegetable oil.
