1 c Yellow split mung beans 2/3 c Finely chopepd onions 1 tb Grated ginger 2 ts Minced garlic 1/3 ts Turmeric 3 md Potatoes, peeled, quartered 1/3 sm Head cauliflower cut into -- florets 1 ts Salt 12 tb Ghee 1 ts Cumin seeds 2 ea Green chilies, seeded. shred 1/2 ts Red pepper 2 ts Lemon juice 2 tb Chopped coriander leaves Wash mung beans. Put in a deep pot with onions, ginger, garlic, turmeric & 3 cups water. Bring to a boil & simmer for 15 minutes. Add potatoes, cauliflower, salt & another 2 cups water. Cook for 15 minutes. Heat ghee over high heat, when very hot, add cumin seeds & fry till they turn dark brown. Add chilies & red pepper & stir briefly. Pour contents into the stew. Add lemon juice & coriander leaves. Ingredients for Moong Gobhi Kofta curry Soaked Moong Dal - 1/4 cup (50 gms) Cauliflower - 1 cup (grated) Paste = tomatoes - 2(250 gms) + green chilli - 1+ ginger - ½ inch baton Green coriander - 3 to 4 tbsp (finely chopped) Oil - 2 tbsp Dry fenugreek leaves - 2 tsp Cinnamon stick - 1 inch Black pepper - 5 to 6 Cloves - 2 Brown cardamom - 1 Cumin seeds - ½ tsp Turmeric powder - ½ tsp Coriander powder - 1.5 tsp Red chilli powder - ¾ tsp Ginger - ½ inch Green chilli - 1
How to make Moong Gobhi Kofta curry For Kofta 1- Take a ½ cup of Moong Dal, clean it, wash it and soak in the water for 2 hours. 2- After 2 hours, add the soaked Dal in a jar of grinder followed by chopped green chilli. ] 3- Add an inch of ginger baton after chopping it. 4- Grind Dal coarsely ground, not finely and separate the ground Dal in a separate bowl. 5- Keep a tablespoon of ground Dal aside in a separate mini bowl. 6- Take a cauliflower, floret it, wash it and grate it. 7- After grating it, add a teaspoon of salt, a ¼ teaspoon of red chilli powder, a ½ teaspoon of coriander powder, a ¼ teaspoon of turmeric powder, 1 to 2 tablespoons of finely chopped green coriander to it and mix the ingredients well. 8- The mixture of Koftas is ready, preheat oil in a wok for frying the Koftas. 9- Lift some mixture using your palms, roll and bind it into a round shaped ball. 10- The medium-high heated oil and flame are required to fry the Koftas. 11- Add a Kofta to fry and fry until it becomes light brown from the bottom. 12- After frying it from the bottom, flip it and fry until it becomes brown from all sides. 13- Turn the flame to low, drain it out using a ladle and fry all the Koftas likewise.
For the curry 1- Preheat a pan, add 2 tablespoons of oil in it and heat it. 2- After heating the oil, add an inch of cinnamon stick, 2 cloves, 5 to 6 black peppers and 1 black cardamom after peeling it. 3- Saute the spices and add a ½ teaspoon of cumin seeds to it. 4- Turn the flame to low and add 2 dry crushed fenugreek leaves to it. 5- After adding the crushed fenugreek leaves, add a teaspoon of coriander powder to it. 6- Stir and roast the spices. Add the paste of tomato, green chilli and a ginger baton. 7- After adding the paste, add a ½ teaspoon of red chilli powder to it and roast until the oil separates from the Masala mixture. 8- Roast the mixture on medium flame and in between of the process, add the saved coarsely ground Dal to it. 9- After adding Dal, add 0.25 cup of water, a ¾ teaspoon of salt, some finely chopped green coriander to it and cook until the gravy boils. 10- The gravy has started boiling, add the fried Koftas to it. 11- Cover and cook the curry on low flame for 2 minutes. 12- The curry has cooked after 2 minutes, pour it out in a separate bowl and garnish it finely chopped green coriander before serving.
Serving 1- Serve it along with Paratha, Chapati, Naan, rice or anything you desire. 2- The cooked quantity of curry is enough for 3 to 4 members.

Can even use red lentils but skip the roasting part if using red lentils. * 2 cups hot water * 1 teaspoon turmeric powder * 1 teaspoon salt * 1 teaspoon oil For cauliflower - * 1 small head of cauliflower. Please cut medium sized florets. Cutting them too small will lead to breaking and becoming mushy. *1 dry bay leaf * 1 dry red chilli * 1 teaspoon cumin seeds (jeera) * 2 green chillies * 1/4 th teaspoon hing (asafoetida powder) * 1/2 teaspoon salt * 1 teaspoon sugar (optional ) * 1/2 teaspoon turmeric powder * 1/2 teaspoon chilli powder * 1 tablespoon grated ginger * 2 medium to small tomatoes * 1/4 th cup frozen green peas. If using fresh green peas add it after adding turmeric powder and chilli powder to cauliflower. * chopped coriander leaves * 1/3 rd cup hot water * 3 to 4 tablespoons oil *** Please note that the dal thickens up a lot once it cools down so please keep it bit runny when taking off heat or adjust consistency according to your preference. This Gobi Moong Dal Bhurji is my mother’s recipe and differs greatly in taste from the gobhi matar bhurji. It turns out perfect every time. The lentil or moong dal provides a rich flavor to the dish.
Ideally this is served with roti, paratha or puri but as kids we would eat bowlfuls just as it is. There are endless recipes for cauliflower mince stir fry … this one stands out among them. This recipe is vegetarian, vegan and gluten free too! The important points to remember: 1. Grate the cauliflower 2. Wash it with boiling water 3. Soak the lentils for at least 2 hours 4.
