How To make Milk Chocolate and Orange Truffles
1/2 c Whipping cream
24 oz Milk chocolate (imported)
- finely chopped 2 tb Unsalted butter
1 1/2 ts Grated orange peel
Unsweetened cocoa powder 2 ts Solid vegetable shortening
Line a cookie sheet with foil. Bring cream to simmer in heavy medium saucepan. Reduce heat to low. Add half the chocolate and whisk until melted. Whisk in butter and orange peel. Freeze until chocolate mixture is firm enough to mound on spoon, about 40 minutes. Drop mixture by rounded tablespoons onto foil-lined sheet, spacing apart. Freeze until almost firm but still pliable, about 30 minutes. Roll each in cocoa powder. Then roll between palms of hands into ball. Place on same sheet. Freeze until firm, about 1 hour. Melt remaining half of chocolate with shortening in top of double boiler over simmering water, stirring until smooth. Remove mixture from over water. Grasp 1 truffle between thumb and index finger; roll truffle in melted chocolate, coating completely. Shake to remove excess chocolate. Place truffle on same foil-lined sheet. Repeat with remaining truffles. Refrigerate until coating is firm, about 1 hour. Dust truffles with cocoa powder, brush off excess. (Can be prepared 2 weeks ahead. 100g dark chocolate
180g 40% milk
30g butter
70g cocoa gin
Fine zest of ½ - 1 orange

For the Infusions:
3-4 crushed cardamom pods
8-12 chopped mint leaves
orange zest of half orange
Ganache Recipe:
- 150ml double cream
- 170g dark/bittersweet chocolate
- 25g unsalted butter
- flavours of your choice (cardamom, mint, orange/lemon zest, ginger, dried lavander, cinnamon, vanilla...)
*Note: Certain combinations require reducing the amount of cream. If you choose milk or dark chocolate AND a liqueur (or in our case the orange juice) use:
- 130ml double cream
- 20ml orange juice or liqueur of your choice
TIPS:
#1: For a stronger taste, leave the infusion stays for longer than 1 hour.
#2: Do not boil the cream. When adding the cream to the chocolate let it rest for one minute and then start whisking all together so that the chocolate melts easier.
#3: Line some parchment baking paper on the plastic boxes. This will make it easier to remove the ganache later on. You can also write on it what kind of ganache is (if you make more than one at the time).
#4: Make sure to dry the knife properly before using it.
#5: Use a knife to better shape the coated truffles once the tempered chocolate starts to get thick.
#6: If pouring the tempered chocolate on the truffles shake the tray so that the excess chocolate goes away.

Chocolate Orange Truffles
Chocolate Orange Truffles are amazing and easy to make. Can be the perfect dessert for Valentine's Day and Christmas.
Ingredients:
Belgian Dark Milk Chocolate /200g
Butter/35g
Double Fresh Cream/150ml
Peel from one orange
One pinch of salt
