How To make Brandied Chocolate Truffles
3/4 c Whipping cream
3 tb Unsalted butter
1/2 lb Bittersweet chocolate
-OR- semisweet chocolate -- Chopped 2 tb Cognac or other brandy
3/4 lb Bittersweet chocolate
-OR- semisweet chocolate -- chopped Bring whipping cream and unsalted butter to simmer in heavy medium saucepan. Reduce heat to low. Add 1/2 pound bittersweet chocolate and stir until melted. Mix in 2 tablespoons Cognac. Let stand at room temperature until firm enough to mound on spoon, about 3-1/2 hours. Line cookie sheet with foil. Spoon truffle mixture by rounded tablespoons onto prepared cookie sheet, spacing apart. Chill until firm, about 1 hour. Roll 1 truffle between palms of hands into ball. Place on same sheet. Repeat with remaining truffles; refrigerate. Melt 3/4 pound chocolate in top of double boiler over simmering water, stirring frequently until smooth. Remove from over water. Grasp 1 truffle between thumb and index finger. Dip into chocolate, coating completely. Shake gently to remove excess chocolate. Place on same sheet. Repeat dipping with remaining truffles. Refrigerate until firm, about 30 minutes. Remove truffles from foil. (Can be prepared 1 week ahead. Refrigerate in airtight container.) Serve cold. TODAY'S RECIPE IS White Chocolate Truffles Recipe | How to Make White Chocolate Truffles
INGREDIENTS:
White chocolate 250gm
Whipping cream 1/4 cup
Butter 2 tbsp
Mix well
Boiling water
Place the bowl over the pan
Melt everything well
Cool for 5 mins
Desiccated coconut 1/2 cup
Vanilla 1 tsp
Mix well
Keep it in the fridge for 2 hours
Make balls
Coat with desiccated coconut
NOTE: 1 CUP = 250 ML

INGREDIENTS
Traditional truffle:
150 g of black chocolate (coating)
75 ml of heavy cream
10 ml of brandy
Cocoa powder (topping)
Sesame truffle:
150 g of black chocolate (coating)
75 ml of heavy cream
10 ml sesame oil
1 g of Maldon salt
Black & white sesame (topping)
White truffle:
150 g of white chocolate (coating)
50 ml of heavy cream
Grated coconut (topping)
Milk chocolate truffle:
150 g of milk chocolate (coating)
50 ml of heavy cream
20 g of peanut butter
Caramelized peanuts (topping)
DIRECTIONS
1. Melt every chocolate separately at bain marie, carefully, to avoid any contact with water. Add the rest of the ingredients of every kind of truffle while we stir the mix until everything is well combined.
2. Pour in a recipient and keep it in the fridge for about three hours. When it is cold enough, we make small balls with the help of a teaspoon and with our hands.
3. Finally, we dip the small balls with the different toppings, the classic one with cocoa powder, the black one with sesame seeds, the white truffle with grated coconut and the chocolate and peanut one with the chopped caramelized peanuts.
4. Eat them immediately or keep them in the fridge.

Whiskey Chocolate Truffles
A chocolate whiskey truffle recipe from Alister Haigh, of the historic Adelaide family of chocolatiers, the Haighs.
Ingredients:
400g dark chocolate,
melted in a bowl over hot water
150g condensed milk
75g melted butter
75ml Irish whiskey,
(less if too strong,
alternatives can be used,
such as brandy or orange liqueur)
Chocolate granules, and/or for coating
Serves 8
Method:
Add condensed milk and melted butter to mixer bowl and mix on slow speed.
Add melted chocolate mix.
Add whiskey slowly and mix in. (Boil first if you want to remove alcohol).
Pour on to tray lined with plastic (to a depth of about 20mm).
Place in refrigerator to set. When set, cut into cubes and then roll into balls, abut 3cm in diameter.
Using your hands, roll truffle in the chocolate granule or cocoa to coat then place on plastic sheet to set.
Allow to set for half an hour in cool area of room before placing in the refrigerator for half an hour.
Allow chocolates to regain room temperature before applying second coat (if you want to put more chocolate on them).
