How To make Mexican Stuffed Chicken
2 Chicken breasts, skinned and
-boned 1 tb Dried bread crumbs
1 tb Grated Parmesan cheese
2 tb Mild green chilis, chopped
1/2 ts Chili powder
1 Egg, beaten
1 oz Moneterey Jack cheese, cut
-into two slices, 3 x 1 in. MEXICAN STUFFED CHICKEN Preheat oven to 375. With kitchen hammer, pound out breasts to 1/ 4 in thick. On each one, place a Tbsp. of chilis and silce of Jack cheese.
Roll up an place seam side down in baking dish. Brush with beaten egg. Mix together bread crumbs, Parmesan cheese and chili powder and sprinkle over the chicken rolls, patting into place to form a crust. Bake for about 20 min- cheese inside will be melted and the crust nicely browned. Serves 2.

Fajita Chicken Stuffed Peppers | 15min recipe (no rice!)

???? INGREDIENTS:
8-ounce bag John Soules Foods Chicken Fajitas
15-ounce can black beans, rinsed & drained
1 cup corn, canned or frozen, thawed
1/2 cup salsa
1 ½ cups shredded cheese, Mexican blend
3 bell peppers, any color
Slice peppers in half, devein and remove seeds, place them in a baking dish.
Coarsely chop the chicken fajita strips into ½-inch pieces. Transfer them into a large, microwave-safe bowl. To the chicken, add black beans, corn, and salsa. Mix to combine.
Microwave on high, for 2 minutes, give everything a quick stir, and heat for an additional 1 minute.
Add 1 cup of shredded cheese to the mixture and stir to combine. Generously fill bell peppers with chicken fajita mixture and top with remaining cheese.
Bake in a 400F preheated oven for 10 minutes until the cheese is melted, and the peppers are heated through.
