Stuffed taco shells recipe :
250g pork mince
250g beef mince
1 onion, finely chopped
200g mushrooms, small diced
1 tin chopped tomatoes
2 tbsp taco seasoning
2 tbsp ketchup
1/2 tsp ground black pepper
1/2 tbsp garlic powder or 3 cloves, crushed
1/2 tsp celery salt
white sauce, make own or use a jar
cheddar cheese, as much as is your preference
sprinkle of smoked paprika
cook your meat and drain the fat, add in the onion and mushroom and cook until both are soft and released their water, add in the tin of tomatoes and ketchup and stir well, add in all your seasonings, stir well and simmer for about 20 minutes. check the taste, add salt if needed, chilli peppers if you want spice. cool and refrigerate, this makes it easier to stuff the shells.
use large pasta shells,bring a pan of water to a boil add salt and oil, add in your shells, keep on a slow rolling boil for 8 minutes drain straight away. should be 3/4 cooked, allow to cool after draining. using a deep dish, spray with some oil, fill your shells, lay them out in the dish, top with white sauce and cheese. bake on gas 4 for 30 mins or until piping hot.
