Ingredients:
chicken wings - 1 kg (2.2 lb)
sodium bicarbonate - 10 g (0.35 oz)
cold water - 1 l (34 fl oz)
Leave it for 20 min
oil - 20 ml (0.7 fl oz)
salt - 8 g (0.29 oz)
black pepper - 5 g (0.18 oz)
sweet paprika - 5 g (0.18 oz)
garlic - 2 cloves
ketchup - 30 g (1 oz)
mustard- 20 g (0.7 oz)
honey - 20 g (0.7 oz)
water - 150 ml (5.07 fl oz)
Cook for 20 min
cabbage - 400 g (14 oz)
carrot - 1 piece
mayonnaise - 30 g (1 oz)
mustard - 20 g (0.7 oz)
vinegar - 10 ml (0.34 fl oz)
sugar - 10 g (0.35 oz)
green onion - 10 g (0.35 oz)
herbs of Provence - 10 g (0.35 oz)
parsley - 10 g (0.35 oz)
salt - 5 g (0.18 oz)
black pepper - 4 g (0.14 oz)

Rick Bayless Hacks: Dynamite Chicken Wings with Tamarind Candy
???? These Dynamite Tamarind Chicken Wings are sweet, spicy and totally unexpected ????
• 1 ½ pounds of chicken drumettes
• 3 tablespoons butter, melted
• 3 tablespoons Mexican hot sauce (like Valentina or Tamazula)
• Salt
• 4 large garlic cloves, peeled
• 6 ounces Pulparindo tamarind candy (original flavor), broken up if in large pieces
• 2 canned chipotle chiles en adobo
• 2 tablespoons agave syrup
Heat the oven to 450 degrees. Line a rimmed baking sheet with foil. In a large bowl, toss the chicken drumettes with the butter, hot sauce and 1 teaspoon salt, then spread into a single layer on the baking sheet. Roast in the hot oven for about 30 minutes, until richly browned, flipping them halfway through the cooking. While the wings are cooking, put the garlic in a microwave-safe bowl, cover with water and microwave at 100% for 1 minute. Drain and place in a blender jar, along with the tamarind candy, chipotle chiles, agave syrup, 1/3 cup water and ½ teaspoon salt. Blend until smooth (if the tamarind has seeds, you’ll hear them knocking around in the blender; blend on a low speed just until garlic and chiles are no longer visible. When the chicken is ready, remove it from the oven and brush it liberally with the glaze. Return to the oven for 10 to 15 minutes for the glaze to set and wings to char in spots.

Fire wings with Spicy Cheese Sauce
Serves 6-7
Recipe in English:
Ingredients:
-Simply sufi wings 1 kg
-Namak (Salt) ½ tsp or to taste
-Baking soda ½ tsp
-Corn flour 1 & ½ tbs
-Maida (All-purpose flour) 3 tbs
-Anda (Egg) 1
-Pani (Water) 2-3 tbs or as required
-Maida (All-purpose flour) 1 Cup
-Chicken powder 2 tbs
-Kali mirch powder (Black pepper powder) 2 tsp
-Sufi cooking oil for frying
Hot & Spicy Sauce
-Sufi cooking oil 1 tbs
-Lehsan (Garlic) chopped 1 tsp
-Lal mirch (Red chili) crushed 1 & ½ tsp or to taste
-Tomato ketchup 2 & ½ tbs
-Hot sauce 4 tbs
-BBQ sauce 4 tbs
-Oyster sauce ½ tbs
-Namak (Salt) ¼ tsp or to taste
-Cheeni (Sugar) ½ tbs
-Pani (Water) ½ Cup or as required
-Safed til (Sesame seeds) to sprinkle
For Cheese Sauce:
-Makhan (Butter) 1 & ½ tbs
-Maida (All-purpose flour) 1 tbs
-Paprika powder 1 tsp
-Namak (Salt) ¼ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Lehsan powder (Garlic powder) ½ tsp
-Doodh (Milk) 1 Cup
-Cheddar cheese grated ½ Cup
Directions:
-In bowl,add chicken wings then wash & pat dry.
-Now cut chicken wings with the help of the knife & set aside.
-In bowl,add salt,baking soda,corn flour,all-purpose flour and mix well.
-Add egg and water,whisk well & set aside.
-In bowl,add all-purpose flour,chicken powder,black pepper powder and mix well.
-Now dip chicken wings into egg mixture then coat in dry flour mixture.
-In wok,add sufi cooking oil and heat it,fry chicken wings on medium flame until golden brown.
For Hot & Spicy Sauce:
-In wok,add sufi cooking oil,garlic,red chili crushed and mix well.
-Add tomato ketchup,hot sauce,BBQ sauce,oyster sauce,salt,sugar and mix well.
-Add water,mix well and cook for 2 minutes.
-Now add fried chicken wings and coat well.
-Sprinkle sesame seeds & serve!
For Cheese Sauce:
-In saucepan,add butter and let it melt.
-Add all-purpose flour and mix well for 2 minutes.
-Add paprika powder,salt,black pepper powder,garlic powder and mix well.
-Add milk,whisk well and cook until sauce thickens (approx. 3-4 minutes).
-Switch off the flame,add cheddar cheese and mix until well combined.

-Anda aur pani dal ker ache tarhan whisk karein & side per rakh dein.
-Bowl mein maida,chicken powder aur kali mirch powder dal ker ache tarhan mix ker lein.
-Ab chicken wings ko anday ka mixture mein dip karein phir dry flour mixture mein coat ker lein.
-Karhai mein sufi cooking oil dal ker garam karein aur chicken wings ko darmiyani ancch per golden brown hunay tak paka lein.

-Karhai mein sufi cooking oil,lehsan aur lal mirch crushed dal ker ache tarhan mix karein.
-Tomato ketchup,hot sauce,BBQ sauce,oyster sauce,namak aur cheeni dal ker ache tarhan mix ker lein.
-Pani dal ker mix karein aur 2 minutes kliya paka lein.
-Ab fried chicken wings dal ker ache tarhan coat ker lein.
-Safed til dal ker serve karien.
For Cheese Sauce:
-Saucepan mein makhan dal ker melt ker lein.
-Maida dal dein aur 2 minutes kliya ache tarhan mix karein.
-Paprika powder,namak,kali mirch powder aur lehsan powder dal ker ache tarhan mix ker lein.
-Doodh shamil karein aur ache tarhan whisk ker ka sauce garha hunay tak paka lein (approx. 3-4 minutes).
-Chulha bund ker dein aur cheddar cheese dal ker combine hunay tak ache tarhan whisk ker lein.
