1/2 c Quaker Oats (quick or
-old-fashioned, uncooked) 1 tb Minced parsley
3/4 ts Chili powder
3/4 ts Paprika
2 Chicken breasts, split,
-skinned 3 tb Margarine, melted
2 md Tomatoes, coarsely chopped
1/2 c Chopped green pepper
1/4 c Coarsely chopped onion
2 tb Minced parsley
1 sm Clove garlic, minced
1 tb Lemon juice
Source: MAINPOUL.ZIP Heat oven to 425 degrees. Place oats, parsley and seasonings in blender or food processor; blend about 1 minute, stopping occasionally to stir. Coat chicken with oat mixture. Place on rack in 15 x 10" jelly roll pan; gently, brush entire surface of chicken with
margarine. Bake 35 to 40 minutes or until juices run clear when chicken is pierced with fork. Meanwhile, combine remaining ingredients; mix well. Serve with chicken. Makes 4 servings.

4-5 chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon cumin
2 teaspoons salt (1 tsp over chicken, 1 tsp in meal)
1/2 teaspoon black pepper
16 ounces salsa (I used Pace Restaurant Style)
1 can black beans, strained & rinsed
1 can corn, strained
1 bunch fresh cilantro, finely chopped
1/2 cup shredded cheese (Monterey Jack or Mexican)
DIRECTIONS:
1. Heat large skillet over medium heat, then add olive oil and chicken.
2. Sprinkle with all the spices and cook about 4-5 minutes on each side, leaving the center a little pink.
3. Add remaining ingredients and get the salsa bubbling.
4. Cook 2-3 minutes until chicken is cooked through.
5. Sprinkle with cheese and fresh cilantro. Eat on a plate, or wrap it in a tortilla with sour cream.

1/2 Tbsp Mexican oregano
1 1/2 cups of half & half
4 Canned tomatillos
1/2 Tbsp chicken bouillon
1 tsp ground cumin
1 tsp sugar
2 Tbsp butter
Serve with mashed potatoes or rice

Chicken cook time might vary by a few minutes. If your chicken breast is on the larger side. Add 5 mins to your cook time.

TACO SEASONING:
(Note: you can make half of this seasoning if you don't want to keep more of this for future cooking)
1 cup Chili Powder
2/3 cup Ground Cumin
1/3 cup Ground Black Pepper
