Easy Bistec ranchero recipe-
Ingredients
2 chicken breast
7 guajillo Chiles
1 1/2 cups water
1 Jalapeño
1 1/2 onions
3 garlic cloves
1/2 bunch cilantro
1 Tbsp butter
1 Tbsp chicken bouillon (adjust to taste)
1 /2 cup heavy whipping cream
1 1/2 cups Melty cheese
1 Tbsp Olive oil
1/2 Tbsp Mexican oregano
1 tsp black pepper
1 tsp salt
1 tsp smoked paprika
1 tsp ground cumin
Optional for spice 1 serrano or Jalapeño (Extra spicy use 3 Serranos : )
Serve with white rice, salad, french fries, and corn tortillas

EASY AUTHENTIC HOMEMADE MEXICAN SHREDDED CHICKEN TACOS!
IN THIS VIDEO:
I show you how to make the easiest authentic mexican shredded tacos at home! Just because we're stuck inside, that does not mean we have to sacrifice flavor. With this simple recipe you'll be able to enjoy delicious tacos right in the comfort of your own home!
RECIPE INGREDIENTS:
5-6 chicken thighs
4-5 bay leaves
1 white onion
5 cloves of garlic
1/2 green bell pepper
4 chile guajillos
3 roma tomatoes
1 tsp cumin
1-2 TBSP oil of choice
Salt and pepper to taste
Instant corn masa. I used Masa Brosa in this video because they were out Maseca that day. But preferably Maseca if you can find it. Just follow the instructions on the back. You can usually find it at most grocery stores in the international foods aisle.
INSTRUCTIONS:
Bring a pot of water to a boil. We want to season season the chicken a bit. Add chicken thighs to boiling water. Crunch up the bay leaves and add them in. Add 1/2 the onion. Add the bell pepper. Add 2 cloves of garlic. Add salt and pepper.
Once chicken is done take it out. Let it cool and shred and set aside.
For the sauce take a smaller pot of water and rehydrate your dried Chile guajillos. Add Chile de árbol for more spice if you'd like. This should only take 3-4 minutes. Once they're rehydrated take them out, let them cool, cut in half and remove the seeds.
To a blender add there other 1/2 of the onion. Add the 3 tomatoes, Chile guajillos, 3 cloves of garlic, salt, pepper, and some of the water from the chicken pot. Add enough just to cover the ingredients and blend.
Once blended pass through a strainer to leave the chunky bits out. ONLY IF YOU WANT TO. Sheesh lol I've seen some of y'all in the comments ????
Heat up another pot on medium heat. Add oil and sauce. Bring to a simmer and add in your shredded chicken. Let simmer for about 20 minutes stirring occasionally. After that it's ready to serve.
Make your own tortillas or buy them whatever your preference. Serve with white or Spanish rice if you'd like too. Do whatever you want ????

FAMOUS Baked Mexican Chicken and Rice Poblano Casserole Recipe
Hello & welcome to the Views Kitchen! In today's recipe, we will be showing you how to make a layered casserole with poblano chili peppers being the start of the show. I'm aware that this is not authentic Mexican food friends. This is my original recipe thank you for respecting my creativity and taste buds.
????If you love using poblanos, You'll love this chimichanga casserole recipe
Bake temp: 380 Degrees (F)
Bake time: 25 minutes
Broil on HIGH the last 3 minutes
Ingredients
1.5 pounds pre-cooked shredded chicken (I used 4 thighs)
5-7 poblano peppers + one poblano for topping
6 Yellow corn tortillas
2 1/2 cooked rice (I used Calrose)
2 1/2 cups heavy cream
3/4 cup water (to blend roasted chilis)
2 cups freshly shredded mozzarella (or Oaxaca- manchego)
1/2 cup cotija cheese or parmesan
1/2 finely chopped onion (use a grater : )
3 finely chopped garlic cloves
1/2 bunch of cilantro (50 stems :)
2 Tbs butter
1 1/2 Tbsp chicken bouillon (adjust to taste)
1/2 tsp black pepper
Tip
-The layering used in this recipe was done 2x (including the tortillas 6 total)
-If you have a plethora of poblanos you can always add more to this recipe : )
-Taste best with yellow corn tortillas
-If you have fresh chicken broth use 3/4 to blend with poblanos for best flavor
-Save 2 cups of creamy poblano sauce as mentioned in the video
-This recipe is great for later use and frozen
*If frozen Thaw out fully
*Cover with a foil
*Bake at 380 Degrees for 35 minutes
*remove foil and continue baking for an additional 10 to 15 minutes

This really is the best Mexican spiced chicken with some insanely crunchy skin. I love all kinds of Mexican chicken recipes but a simple marinaded chicken thighs cooked over high heat in a cast iron grill pan is really on the next level. I hope you enjoy these Mexican spiced chicken thighs as much as I did.

4 chicken thighs
1/4 cup avocado oil
1/2 TBSP salt
2 TBSP ground dried chilis
1 TBSP pepper
1/2 TBSP cumin
1 tsp paprika
1 TBSP onion powder
1 tsp garlic powder
1/2 lime juiced
Oven baked sweet potato wedges:
3 -4 sweet potatoes
1/4 cup avocado oil
2 TBSP garlic oil
1/2 TBSP turmeric
3/4 TBSP paprika
1 tsp salt
1/2 tsp black pepper
cilantro and lime to garnish.
