THINGS YOU’LL NEED:
1 medium onion, chopped
1-2 jalapeno peppers, chopped (optional - use serrano for spicier)
3 cloves garlic, chopped
2 medium tomatoes, chopped (or use a 15-ounce can of tomatoes, drained - I prefer fire-roasted tomatoes)
1 teaspoon Mexican oregano
1 teaspoon cumin
Salt and pepper to taste
2 tablespoons vegetable oil
1.5 cups long grain or medium grain rice, rinsed
2 cups chicken broth, warmed
Chopped cilantro for serving

A hassle free rendition of Spanish rice made the BIG SHTICKS WAY! ENJOY!!
Ingredients are as follows:
2 cups jasmine rice
5-6 garlic cloves minced
1/2 sweet yellow onion finely chopped
2 1/2 tblspn Knorr Caldo de Tomate
2 1/2 cups of water
3-4 tblspn cooking oil

My MEXICAN RICE IS DELICIOUS AND AUTHENTIC, it's a perfect side for just about and dish, its super easy and fluffy.
MOLCAJETE INGREDIENTS
2 GARLIC CLOVES
1/2 tsp salt
1/4 tsp peppercorns
1/4 tsp whole cumin1/2 water
BLENDER INGREDIENTS
2 ROMA tomatoes (core removed)
1/4 small onion
spices from molcajete
RICE
2 TBSP vegetable oil
1 C. Rice (I like jasmine) (rinsed and drip dry)
1 Tbsp chicken bouillon
1/4 C. chopped carrots (optional)
2 C. water
1 serrano pepper (optional)
mixture from blender
Bring to a boil, then lower to simmer for 15-18 minutes (mine is 18 minutes) DO NOT REMOVE LID then set aside for 15 minutes and it'll be ready to serve.

HOW TO MAKE PERFECT MEXICAN RICE EVERY TIME: Easy Recipe and Tips for Cooking Delicious Mexican Rice
For years, I struggled to make good Mexican Rice. It was dry or mushy, and always inconsistent...until I learned HOW TO MAKE PERFECT RICE EVERY TIME. In this video, I share my easy recipe, as well as some tips for cooking delicious Mexican Rice. Some of you may call it Spanish Rice. What's funny is, when I was growing up, we just called this, rice. At any rate, read on for the recipe.
Mexican Rice
1 cup long grain rice
2 cups hot water
2 tsp. chicken bouillon
1/4 of an onion, chopped small
1/2 an 8oz. can of tomato sauce
1 tsp. cumin
salt to taste
*You can also add peas, carrots, and corn to Mexican rice, if you choose.
Place skillet on stove over medium high heat and coat the bottom of the pan with oil. Add in rice and brown, stirring continuously to ensure it doesn't burn. As rice begins to turn a light golden color, add in chopped onion and continue stirring until onion is soft and rice is golden. Next, add in the tomato sauce, the salt, the cumin, the hot water, and the chicken bouillon and mix well. (This is the last time you will stir.) When it comes to a boil, reduce the heat to low, cover pan with lid, and let cook untouched for 15 minutes. (Do not remove the lid during this time.) After 15 minutes, remove from stove, but leave lid on, and let sit for 5 to 10 minutes. Then remove lid and fluff rice with a fork. It should be cooked to perfection.

Method:
1. Soak the basmati ricein water and keep it aside.
2. Blanch the tomatoes in hot water.
3. Once the tomatoes are blanched, let it cool, peel the skin.
4. Grind the tomatoes into a puree along with chilli powder
5. To a wide pan, add oil and butter.
6. Once the butter melts, add chopped garlic and onions.
7. Once the onion turns transparent, add salt, pepper, cumin powder and mix it.
8. Now add the washed basmati rice and mix it without breaking the rice.
9. Toast the rice for about 2 mins on medium flame.
10. Now add green capsicum, red capsicum, yellow capsicum, carrot, peas and mix gently.
11. Add the ground tomato puree and mix everything.
12. Add Oregano and saute the rice.
13. Finally add water, cover the pot, reduce the flame and let it cook for 20 mins.
14. Delicious Mexican rice is ready.
