How To make Mexican Pasta Casserole
1 lb Rigatoni or Ziti
-OR other medium pasta -shape, uncooked 2 ts Vegetable oil
1 md Onion
chopped
1 Garlic clove :
minced
1 Jalapeno seeded and minced
3 tb Chili powder
28 oz Canned diced tomatoes
:
undrained 1 t Cumin
1 t Dried oregano
8 oz Cooked chicken breast
-(skinless, boneless) - julienned 1/4 c Ripe olives
4 oz Grated Monterey Jack cheese
-OR Queso Quesadilla -OR Havarti -with Jalapeno Pepper -cheese, divided
Preheat oven to 375 degrees F. Prepare pasta according to package directions. While pasta is cooking, heat the oil in a medium saucepan over medium heat. Add the onion, garlic and jalapeno and cook until softened, about 3 minutes. Add the chili powder and stir for 1 minute. Add the tomatoes and liquid, cumin and oregano. Simmer until slightly thickened, about 15 minutes. When pasta is done, drain well. In a bowl, combine pasta, chicken, olives, 3/4 cup of cheese, and sauce. Spoon into a 2-quart baking dish lightly sprayed with vegetable oil. Sprinkle the reserved cheese on top. Cover loosely with foil and bake until warmed through and the cheese melts, about 15 minutes. Ingredients:
Nonstick cooking spray
1/2 (16-ounce) package spaghetti
3/4 pound lean ground beef
1 yellow bell pepper, diced (about 1-1/4 cups)
1 jar (15 to 16 ounces) mild or medium chunky salsa
1 package (about 1 ounce) less-sodium taco seasoning mix (about 4 tablespoons)
1 package (8 ounces) finely shredded Mexican cheese blend (2 cups)
4 green onions, sliced (about 1/4 cup)
1/4 cup chopped fresh cilantro leaves

Mexican Pasta Bake | Good Housekeeping UK
All the spicy flavours of your favourite snack made into a comforting Mexican pasta bake supper.

Directions
Cook the pasta according to pack instructions then drain. In a non-stick pan, heat 1tbsp oil over a medium heat. Add in the onion, green pepper and most of the jalapeno. Cook for 5min until softened. Mix in the garlic, sugar, cayenne and taco seasoning. Cook for a further 2-3min. Stir in the black beans and cook for another 3min. Remove to a bowl.
Heat the remaining oil in the pan and add the mince, breaking it up as it browns. Cook for 5min until browned all over. Tip in the passata and cook for a further 5min. Return the black bean mixture to the pan and stir in the pasta.
Preheat grill to medium. Tip the pasta into a baking dish. Crumble the tortilla crisps evenly over the top of the pasta, then sprinkle the cheese over. Put under the grill for 3-5min until bubbling and golden. Serve with the coriander and remaining jalapeno scattered over the top.

How to Make Mexican Pasta Bake!
Hearty, comforting casserole loaded with ground beef, pasta, salsa, corn and topped with Mexican Cheese makes this Mexican Pasta Bake a delicious and easy dinner recipe that the entire family will pile high on their plates.

INGREDIENTS
1 lb ground beef
15 oz can corn drained
2 c. uncooked spiral pasta
15.5 oz jar salsa
10.75 oz can condensed cream of chicken soup
1 c. shredded Mexican cheese divided
INSTRUCTIONS
Preheat oven to 350 degrees.
Prepare pasta according to package directions.
Brown beef over medium heat in a large skillet until no longer pink. Drain off grease. Stir in salsa, corn, soup and 1/2 c. of cheese. Heat mixture through. Stir in drained and cooked pasta to mixture.
Transfer to greased 2 quart casserole dish. Sprinkle with remaining cheese.
Cover and bake at 350 degrees for 15-20 minutes or until cheese is melted.
NOTES
Ingredient Tips
I like to use spiral pasta, but you can substitute other short pasta shapes, too. So feel free to use penne, cavatappi, or even macaroni if that’s what you have on hand.
You can substitute the ground beef for turkey.
Do you have to cook pasta before making a pasta bake?
For this Mexican casserole you do need to cook the pasta first. There’s not enough liquid in the casserole to cook the pasta, so don’t skip that step!
Should you cover a pasta bake in the oven?
Yes, you should bake it covered! This will keep the moisture from evaporating so your casserole is not dry.
How long do leftovers keep?
The will keep for two to three days in the refrigerator. Just keep them in an airtight container!
