How To make Freezer Mix Mexican Casserole
1 pk Beef-Tomato Freezer Mix
2 t Chili powder
1/3 c Water
1 cn Whole kernel corn(16oz)
1 cn Sliced ripe olives(2 1/4oz)
1/2 c Biscuit baking mix
1/4 c Yellow cornmeal
3/4 c Shredded Cheddar cheese
1 Egg
3 T Milk
Dip container of frozen mix into hot water just to loosen. In 2-quart saucepan, heat frozen mix, chili powder and water to boiling. Reduce heat; cover and simmer, stirring frequently, until mix is partially thawed, about 15 minutes. Stir in corn and olives; heat to boiling. Reduce heat; cover
and simmer 5 minutes. Heat oven to 400'. While meat mixture is simmering, min remaining ingredients. Pour hot meat mixture into ungreased 2-quart casserole. Drop batter by teaspoonfuls about 1/2 inch apart onto meat mixture. (The batter will bake together to form crust.) Bake uncovered 20 minutes.

- 250g onions (2 big yellow onion)
- 300g sieved canned tomato
- 4 laughing cow wedges
- 120g shredded mozzarella
- salt, pepper, oregano, garlic powder

Mexican Casserole using ElMonterey Frozen Burritos
Happy New Year my Boos and Dudes!! I hope this first video of 2024 finds you and yours well!! In this video, I'll be showing you another recipe using my favorite frozen burritos and chimichangas, ElMonterey. I think you'll like this version, and, just like my other version, this is budget friendly. Enjoy????
Here's what you'll need for one package of 8:
1pkg of ElMonterey burritos or chimichangas
1lb ground beef ( or ground meat of choice) cooked and seasoned your way
1can of chili
1can Mexican Rotel
1Box of Velveeta cheese sauce (use one 4oz pouch)
1pkg Knorr Mexican rice (cooked)
1can of your fav beans/drained (optional)
Mexican style shredded cheese
Top with your favs (i.e. cilantro, sour cream, jalapeño peppers, etc.)
