HBWK07A CHUCK OZBURN:
2 cups Corn meal
1 teaspoon Soda - (may need more at low altitudes)
1 teaspoon Salt
4 Eggs
1 1/2 cups Milk
2/3 cup Bacon grease
2 cans creamed corn :
(15oz)
1 cup Chopped green chilies
2 cups Grated Cheddar cheese
Sift corn meal, soda and salt together; add eggs, milk and 1/3 cup bacon grease; mix well; add corn and mix again; pour half of mixture into a heavy casserole in which the remaining bacon grease is melted; spread with chilies and 1 cups of cheese; add remaining mixture and sprinkle with Note: Freezes with excellent results Chuck in Pok 5/25/94 C.OZBURN on GEnie

Mexican Cornbread Casserole Ingredients
2 pounds ground beef or ground chuck
1/2 lg red onion diced
1-2 pks of Taco Seasoning Mix
1-2 cups water
1 15 oz can Petite Diced Tomatoes
1 15 oz can Tomato Sauce
2 cups frozen corn
1 can black beans rinsed and drained
Jalapeno Slices to your taste
1 Tbsp Chicken Bouillon
1/2 Tbsp Coarse Ground Black Pepper
2 boxes Jiffy Corn Muffin Mix (Prepared together)
1 small can green chiles
1 cup cheese or to your taste
Bake at 400 degrees for 35 minutes then add your cheese and bake for another 10-20 minutes until cheese is melted through.

How to make Mexican Cornbread Casserole Video
For this recipe you will need....
For the filling
1lb ground beef
1 beef bouillon cube
2 tbs chili powder
1 tsp garlic powder
1 tsp onion flakes
1/2 tsp cumin
2 tbs flour
1/2 tsp salt
1/2 tsp pepper
1/2 cup water
2 cups shredded cheddar cheese
Cook ground beef until half done, add seasonings.
Finishing cooking, drain, and then add water and flour.
Mix well, then add cheese.
Place into 9x13 greased pan.
For the topping
1 cup yellow cornmeal
1/2 cup flour
1 tbs baking powder
2 tbs sugar
1/2 tsp salt
1 large egg
1 tbs cooking oil
1 can creamed corn
1/2 cup milk
1 diced jalapeño pepper
1 cup shredded cheddar cheese.
Mix all ingredients together, and pour over meat mixture. Place into 350 degree oven for 30 minutes, or until done.
This is such a simple dish to make, and doesn’t take much time to do so. I hope you enjoy this recipe , and this video!!

Mexican Cornbread Casserole -- Easy Budget Friendly Meal
Mexican Cornbread Casserole
Ingredients
• 1 pound lean ground beef
• 1 egg
• 1 can (14 oz) cream-style corn
• 11/3 cup milk
• 1/4 cup vegetable oil
• 2 cups cornmeal
• 4 cups (16 oz.) shredded Cheddar cheese
• 1 medium onion, chopped
• 1 package of taco seasoning
• 1 small can green chilis (drained)
• 1 small can rotel tomatoes (drained)
Instructions
1. Preheat the oven to 350° F. Grease a 13x9x2-inch baking pan and set aside.
2. Meanwhile, cook and crumble the beef until no longer pink, saute the onion with the beef. Drain excess grease. Add taco seasoning, ½ of green chilis and rotel tomatoes. Mix together good.
3. In a bowl, mix cornmeal, milk,oil, egg, corn, and ½ chilis. Mix well.
4. Pour half of the batter into the prepared pan. Sprinkle with 2 cups of cheese. Top with beef mixture.
5. Sprinkle with remaining cheese. Pour the remaining batter over the top.
6. Bake, uncovered, for 55-60 minutes or until a toothpick inserted near the center tests clean.
7. Serve hot.
