Spicy and Sweet Mexican Chocolate Cake
Ingredients
2¾ cups all-purpose flour, 1 cup unsweetened cocoa powder, 1 cup granulated sugar, 1 cup light brown sugar, 1 tablespoon instant coffee, 1 tablespoon ground cinnamon, 2 teaspoons baking soda
1 teaspoon cayenne pepper, 1/2 teaspoon salt, 2 large eggs, beaten
1¼ cups whole milk, 1 cup canola oil, 1 cup sour cream, 2 teaspoons vanilla extract,
Ingredients for Frosting
2 cups heavy cream, One 8-ounce container mascarpone, softened, 1 cup powdered sugar, 1 tablespoon ground cinnamon, 2 teaspoons vanilla extract, 1/2 teaspoon salt and chocolate
Betty's One Layer Mexican Chocolate Cake
Betty demonstrates how to make a One Layer Mexican Chocolate Cake. This is a rich, dark chocolate cake, enhanced by the flavors of cinnamon, red pepper, and coffee.
One Layer Mexican Chocolate Cake
1 ½ cups all-purpose flour
1 cup sugar
½ cup unsweetened cocoa powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
¼ teaspoon ground red pepper (cayenne)
¼ teaspoon salt
1 cup cold water
¼ cup vegetable oil
1 tablespoon brewed coffee, cooled
1 tablespoon vanilla extract
cooking oil spray
In a mixing bowl, combine 1 ½ cups all purpose flour, 1 cup sugar, ½ cup unsweetened cocoa powder, 2 teaspoons ground cinnamon, 1 teaspoon baking soda, ¼ teaspoon ground red pepper, ¼ teaspoon salt, 1 cup cold water, ¼ cup vegetable oil, 1 tablespoon brewed coffee, and 1 tablespoon vanilla extract. Stir until mixture is smooth. Pour into a 9-inch cake pan that has been sprayed with cooking oil spray. Bake at 350 degrees (F) 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and cool in pan for 10 minutes. Remove cake from pan and cool on wire rack until completely cooled. Serve as is, or frost with your favorite frosting. I will be posting a Mexican Chocolate Glaze for this cake in a couple of days. How to Make Mexican Hot Chocolate Cake
My Mexican hot chocolate cake has cinnamon allspice and more than a touch of cayenne pepper for an extra kick. The filling is a creamy vanilla buttercream with a touch of cinnamon and cayenne too. So interesting how different the two buttercreams taste; chocolate makes all the difference! Speaking of chocolate the exterior frosting is so good. Sea salt, cocoa, bittersweet chocolate, cinnamon, and cayenne pepper come together for a heavenly finish. So for those not in the know Mexican hot chocolate has a dash of cinnamon and is sweeter than regular hot chocolate. Not really doing it justice in my description but it's delicious!
