1 pk Unflavored gelatine
1/2 c Water
4 Eggs
3 Semisweet chocolate (1oz sq)
1/4 c Sugar
1/3 c Coffee liqueur
1/4 c Almonds; slivered
1 ts Margarine
1 1/2 c Heavy cream
1 Pie shell; baked
DIRECTIONS - FILLING, SPRINKLE GELATINE OVER 1/2 C COLD WATER IN MEASURING CUP; LET SOFTEN ABOUT 5 MIN. SEPARATE EGGS, PLACING TWO WHITES (refrigerate remain- ing whits) IN SMALL BOWL OF ELEtrIC MIXER, YOLKS IN TOP OF DOUBLE BOILER. LET EGG WHITES WARM TO ROOM TEMP. BEAT EGG YOLKS SLIGHTLY WITH WOODEN SPOON STIR IN GELATINE MIXTURE,CHOCO AND 2 T SUGAR, COOK OVER HOT,NOT BOILING, WATER, STIRRING, UNTIL CHOCO IS MELTED AND GELATINE IS DISSOLVED(10 MIN). REMOVE FROM HEAT. STIR IN COFFEE-FLAVORED LIQUEUR. TURN CHOCO MIX. INTO A MEDIUM LARGE BOWL; PLACE IN LARGE BOWL OF ICE WATER. STIR OCC. UNTIL COOL + CONSISTENCY OF UNBEATEN EGG WHITE(15 MIN) TOAST ALMONDS, COOL. IN CHILLED BOWL, WHIP CRM UNTIL STIFF,REFRIG. BEAT EGG WHITE (SOFT PEAKS) GRADUALLY BEAT IN REMAINING 2 T SUGAR, BEATING UNTIL STIFF PEAKS. WITH WIRE WHISK, FOLD EGG WHITES AND 1 1/2 C SHIPPED CREAM INTO CHOCO MIX. TURN INTO PIE SHELL. CHILL AT LEAST 3 HRS.(OVERNIGHT) CHOP ALMONDS. GARNISH WITH NUTS, WHIPPED CREAM. MAKES 10-12 SERVINGS.

Chocolate Pecan Pie with Bourbon | Food & Wine
For this pie, coarsely chopping the pecans makes the pie easy to slice, although David Lebovitz leaves some whole for visual effect.
Ingredients
CRUST
1 1/4 cups all-purpose flour
2 teaspoons sugar
1/4 teaspoon salt
1 stick (4 ounces) cold unsalted butter, cut into pieces
1/4 cup ice water
FILLING
2 cups (about 7 ounces) pecans
3 large eggs
3/4 cup dark brown sugar
2/3 cup light corn syrup
1 teaspoon pure vanilla extract
2 tablespoons unsalted butter, melted
3 tablespoons bourbon
1/2 teaspoon salt
3/4 cup semisweet or bittersweet chocolate chips

Mexican Chocolate Pecan Pie
A Twist on Pecan Pie using Mexican chocolate and Agave for a pie that’s less sweet but has warm notes of cinnamon and chocolate.

Pecan Pie:
1 Store Bought Pie Dough or Homemade
¼ Cup Butter
¼ Cup Brown Sugar Packed or Coconut Sugar
1 Disc of Abuelita or ½ Cup of Semisweet Chocolate Chips with 1 tsp of Cinnamon.
3 Tbsp Agave or Maple Syrup and Honey
1 tsp Vanilla Extract or Vanilla Bean Paste
¼ tsp Salt
3 Eggs Scrambled
1 Cup Pecan Halves
1 Cup Pecan Pieces
Cinnamon Whipped Cream:
8 oz Heavy Whipping Cream
1 tsp Ground Cinnamon Plus more for sprinkling
1 tsp Vanilla Extract
2 Tbsp Powdered Sugar or regular sugar
INSTRUCTIONS
Preheat Oven to 350 degrees. Place Mixing bowl and Whisk attachment in the freezer to get it cold. Remove refrigerated pie dough and allow to get to room temperature.
Place pie dough into a 9 in pie dish. If using smaller ramekins, cut pie dough to fit each ramekin.
In a small pot melt butter and add brown sugar over medium heat until melted, Stir the chocolate in and mix well. Once combined add Agave, Vanilla, and Salt. Combine well, bring to a low boil for about 2 minutes, then remove from heat to cool for 15 minutes.
While mixture is cooling, setup up mixing bowl for whipped cream. Place heavy cream, cinnamon, vanilla, and powder sugar into bowl and beat with an electric mixer on medium high speed until soft peaks form. Place in a covered dish in the refrigerator.
Beat the 3 eggs together and then pour into the cooled chocolate mixture. Stir until combined and add the pecan halves and pieces, stir well. You can save some pecan halves to place on top.
Pour mixture into pie crust and bake for 45 min or until a toothpick comes out clean. If using smaller ramekins decrease baking time to 20-25 minutes, or until a toothpick comes out clean.
Allow pie to cool for 30 minutes and serve with Cinnamon Whipped Cream.
