4 Eggs separated (room
-temperature) 3/4 c Sugar
1 c Mayonnaise (room
-temperature) 3/4 c Ground almonds
1/4 c Clour
1/4 c Kahlua
From: SF Examiner Posted by: Emily Jorge, COOKING echo Mexican Chocolate Cake Confectioners' Sugar Line the bottom of a 9 inch springform pan with waxed paper. Lightly grease the wased paper and side of pan. Melt the chocolate and cool to room temperature. In a large bowl, with mixer at high speed, beat the egg yolks. Graduly add sugar and beat until light about 4 minutes. Add mayonnaise and beat for 1 minute longer. Stir in the ground almonds and flour until blended. Stir in Kahlus. In a medium bowl, using clean beater, beat egg whites until stiff and fold into the batter. Pour mixture into the prepared pan. Bake at 350 for 55 min. or until firm. Cool the cake in the pan on a wir rack for 10 minutes. Remove the side of the pan and cool the cake 30 minutes longer. Invert onto a wire rack and remove bottom of pan and waxed paper. Cool completely. Sprinkle with confectionr's sugar you might try using a geometric patter made from paper to create an interesting design instead of the old doilie trick. Hope this is it. Emily Jorge

Combine the butter and bittersweet chocolate in a microwave-safe bowl and melt in 30-second intervals until melted and smooth. (Alternatively, heat chocolate and butter in a double boiler until melted and smooth).
In a large bowl, combine sugar and eggs and whisk very well to combine. Then add the chile powder, cayenne, cinnamon, vanilla, and salt, and mix to combine.
Slowly add the melted chocolate mixture to the large bowl while whisking and continue to whisk until smooth. Finally, fold in the cocoa powder and flour with a rubber spatula and mix until just combined.
Pour the batter into an 8x8 baking pan lined with parchment paper. Bake at 350°F for 26-28 minutes. Sprinkle with fleur de sel, slice, and serve.

Wet Ingredients
- 3 large Eggs egg whites and yolk separated
- 1 cup Dark Chocolate Chunks
- 1 stick Unsalted Butter to melt chocolate
- ¾ cup Granulated Sugar divided
- 1 Tsp Pure Vanilla Extract
Dry Ingredients
- ¾ cup AP Flour
- ½ cup Dutch Processed Cocoa Powder
- 1 Tsp Baking Soda
- ½ Tsp Baking Powder
- ¼ Tsp Kosher Salt
3-Milk Mixture
- 1 cup Dark Chocolate chunks melted
- ¼ cup Heavy Cream to make Chocolate Milk
- ¼ cup Evaporated Milk
- ¼ cup Condensed Milk
Frosting
- 1 cup Heavy Cream
- ¼ cup Melted Dark Chocolate or 2 tbsp Dark Cocoa Powder
- 1 Tsp Vanilla
- 2 Tbsp Granulated Sugar
- Chocolate Shavings for decoration
- Melted Dark Chocolate for decoration (optional)
1) Sperate Egg Yolks and Egg whites. Place the Eggwhites in a clean and moisture-free bowl. Beat over medium speed using a handheld mixer until foamy. Add 1 tbsp of granulated sugar and beat until you have stiff peaks in your Meringue. Keep this aside.
2) In a separate bowl, whisk together AP Flour, Cocoa Powder, Baking Soda, Baking Powder, and a pinch of Kosher Salt.
3) Melt Dark Chocolate chunks and Butter in a microwave-safe bowl. Stir until smooth and glossy. Allow it to cool down to room temperature for 5 minutes.Beat Egg Yolks with Granulated Sugar and Vanilla Extract. Now, combine the chocolate mixture with the Egg yolks mixture. Beat until glossy.
4) Stir in the dry mixture with the wet mixture. Do not overmix. Just mix until combined.
5) Fold the Meringue with the Cake Batter.
6) Place this Chocolate Tres Leches Cake mixture in the lined baking dish. Bake @350F (180C) for 20-25 minutes. After the cake gets baked, insert a toothpick in the center and check if its done. If it comes out clean, your cake is baked to perfection. Allow it to cool down to room temperature for about 5 minutes on the counter.
7) Whisk Melted Chocolate, Heavy Cream, Evaporated Milk. and Condensed Milk in a jar until combined.
8) Use a fork to prick the top of the cake. Poke holes all over the cake.
9) Pour the three milk mixture over the cake. Allow it to refrigerate covered for 2 hours, so that the cake soaks in all the moisture.
10) Whip Heavy Cream with granulated sugar and cocoa powder. Once you have stiff peaks, spread them over the cake. Even it out using an offset spatula.
11) Decorate the Chocolate Tres Leches Cake with some chocolate shavings or melted chocolate. Cut cake into equal-sized squares and serve.

My Mexican hot chocolate cake has cinnamon allspice and more than a touch of cayenne pepper for an extra kick. The filling is a creamy vanilla buttercream with a touch of cinnamon and cayenne too. So interesting how different the two buttercreams taste; chocolate makes all the difference! Speaking of chocolate the exterior frosting is so good. Sea salt, cocoa, bittersweet chocolate, cinnamon, and cayenne pepper come together for a heavenly finish. So for those not in the know Mexican hot chocolate has a dash of cinnamon and is sweeter than regular hot chocolate. Not really doing it justice in my description but it's delicious!
