Mango Glazed Pork Tenderloin w/ Brown Rice Medley
Recipe Info:
Pork
• pork loin
• olive oil
• salt n pepper
Glaze
• 2 jars mango jelly
• 2 tbsp brown mustard
• ½ cup white wine
• 1 tsp ground ginger
• 1 tsp all spice
Combine glaze ingredients in medium saucepan and heat over medium heat. Reduce heat and simmer 20-30 minutes.
Prepare pork by rubbing with olive oil and seasoning with salt and pepper.
When glaze is ready pour about 1/3 of it into a separate bowl for basting the pork while grilling.
Grill the pork at a low heat, basting with glaze often, and turning often to cook evenly.
When finished, remove from heat and let stand for about 10minutes. Slice into pieces, pour remaining glaze over the top, and serve.
Brown Rice Medley
• 1 bag brown rice (2 cups)
• 2 shallots, chopped
• 2 tbsp honey
• ¼ cup olive oil
• 2 tbsp lime juice
• 2 tbsp orange juice
• 1 cup grated carrots
• 2 tbsp chopped cilantro
• ¼ cup basil chopped
• Salt n pepper
Cook rice as directed on bag (boil 5 cups water, add 2 cups rice, simmer for 30-45 minutes). Cool and set aside in large bowl.
Combine next 5 ingredients in a small bowl and whisk together. Pour over rice, add carrots, basil and cilantro and mix well. Add salt and pepper to taste.
