Pork Tenderloin 101 | Chef Eric Recipe
Looking for a fun and easy lunch or dinner, look no further than a quick roasted pork tenderloin. This is a method first, recipe second video that will help you access the big bold power of your Kamado Joe. Happy Grilling!
Quick Roasted Pork Tenderloin
2 Each Cheshire Pork Tenderloins
Quick Marinade
½ Cup Dijon Mustard
2 tsp Garlic, Chopped
2 Sprigs Rosemary, Fresh Chopped
2 Sprigs Fresh Thyme
5 Leaves Sage
1 Tbsp Lane's BBQ Honey Sriracha Rub
2 tsp Olive Oil
Method:
1. Stabilize your grill at 450F. Bank all of your coals to one side of the grill and top with a cast iron grill grate.
2. Trim any visible silver skin from the surface of the tenderloin.
3. Combine all ingredients in a bowl and fully incorporated. Season the tenderloin with the Lanes BBQ Honey Sriracha Seasoning and paint mixture evenly on each tenderloin and allow to marinate for at least 10 minutes.
4. Season the Cast Iron with a touch of oil and place the quick marinated tenderloins on the grill grate. Sear for 6 to 7 minutes and flip. Close the dome and cook for another 10 minutes. Open the dome and turn 1 more time on the side that needs a bit searer, close the dome and cook for another 4 to 5 minutes. Look for an internal temp of 140F.
5. Once you have reached the correct internal temperature, remove the tenderloins to a cutting board and allow to rest for 8 to 10 minutes. Slice down the loin and enjoy.

Brine
500ml - 1 Litre / 2 - 4 Cups of Dr Pepper
100g Sea Salt
1 Boneless Pork Loin
Glaze
275g Tart Cherry Preserve
1/2 Cup Dr Pepper
1/2 Cup Water
1-2 Tbsp. Chipotle Sauce
4 Tbsp. Djon Mustard

The Weber Q1200/ Weber Baby Q doesn't have any big weaknesses. The Weber Q 1200 heats up fast and grills quickly and evenly. It has porcelain-enameled cast iron cooking grates that are a delight to cook on because they are non-stick, super easy to clean and maintain, and can even go in the dishwasher. The Q 1200 has a sweet, handy thermometer, and its 189 sq in of grilling space holds a surprisingly large amount of food. The Q would do well on your tailgate, on a picnic table, on your apartment patio, or as part of your RV setup.
If you want a grill that is easy to cook on, easy to clean, and simple to light and maintain temperature control with, the Q could be the one for you.
The Weber Baby Q 1200 is a strong contender.
My experience with the Baby Q 1200 has been 2nd to none..
I've had a number of barbecues over the years and none compare to the excellence of the weber q. If You haven't already you should certainly consider the Weber.
The Q 1200 has one stainless steel burner tube that delivers. It heats up quickly, cooks evenly and leaves beautiful char marks. Cooking time on this Baby Q grill is less than expected for such a small product.
The Q 1200 makes grilling simple and fun. Its push-button electronic ignition starts with just one press of the button every time. It has an infinite control burner valve that allows the flame to be adjusted to clear low, medium and high settings, and the built-in temperature gauge allows for even greater temperature control. This grill does cool down quickly when the lid is open though, so when you're doing your flipping, make it quick. The regulator is attached snugly, and the grease trap is large, easy to take on and off, and comes with a disposable (or reusable) aluminum insert.
At 31 pounds, this is heavy for a tabletop grill. This Weber Baby Q grill has a cast aluminum lid and body which means no rusting or flexing, and a glass-reinforced nylon frame. This grill is sturdy and durable and will likely last a very long time.
This grill is simple to transport at the same time. You can grab it and put it in your boot and then place it on a picnic bench which is simple enough, but you do have to carry it in hand . It is closer to average weight if you consider all of the contenders.
The Weber Q 1200 is built with the regulator positioned directly underneath the right handle. This means that with propane bottle attached you will have wks. if not months of barbequing with your weber baby q.
The Q's side tables fold inside for travel effortlessly, but you will want to make sure that it's completely cool before you do so as they are made out of plastic and could melt..
Cooking Area
This product has 189 square inches of grilling space on top of porcelain-enameled cast iron cooking grates. I love the porcelain-enamel. It's the bomb. It's a breeze to clean with a grill brush or a sponge and soapy water. It can even be put in the dishwasher. It's also dreamy to grill on and wonderfully non-stick.
The 189 square inches of grill space holds a surprisingly large amount of food. i am able to load it up with enough meat to easily feed 3-4 people.

Making A Cherry Glaze For Pork Loins
Making a simple Cherry Glaze from scratch to put on my pork loins I was smoking. Also made an Apricot-Pineapple glaze by subsituting the Cherry Currant with the Apricot-Pineapple Perserves. The glaze turned out awesome on the pork loins.

INGREDIENTS:
-cherry glaze
●1 (12 ounce) jar cherry preserves
●2 tablespoons cajun seasoning, Butt Kickin' Blacken, Original Recipe
●1/4 cup red wine vinegar
●1/4 cup ruby port, as needed
●pork
●1 pork tenderloin, about 35 pounds
●6 slices bacon , Thick-sliced
●1 tablespoon cajun seasoning, Butt Kickin' Blacken, Original Recipe
●toothpick
●vegetable oil
How to Roast Pork Loin - Boneless Pork Loin Roast
This video will show you how to roast pork loin. I am using a boneless pork loin roast and make a delicious spice rub for it. It is best for the rub to stay on it overnight before cooking the pork roast.

Recipe for the Pork Loin Rub
6 cloves garlic
zest of one orange (about 1 Tablespoon)
3/4 teaspoon ground ginger
1/4 teaspoon cardamom
1/2 teaspoon cinnamon
2 teaspoons fennel seeds
1/2 teaspoon whole allspice
2 teaspoons cumin
1 teaspoon coriander
1/4 teaspoon cayenne pepper
3/4 teaspoon red chili flakes
1 Tablespoon Kosher Salt (I use about 1 teaspoon of Kosher salt per pound of meat)
3/4 teaspoon black pepper
1 Tablespoon apple cider vinegar
2 Tablespoons Orange Juice
1/4 cup olive oil
1/4 cup honey
For the Tart Cherry Sauce
1 Tablespoon olive oil
1 shallot
1 cup red wine (I used Pinot Noir)
2 Tablespoons balsamic vinegar
1 Tablespoon brown sugar
wedges from one orange with juice
1 cup dried tart cherries
1/4 cup dried apricots
1/2 cup orange juice
1/4 cup pecans
You can also add one Tablespoon of butter at the end of cooking (with the heat off) to give your cherry sauce a little shine.
Marinade overnight and roast at 400°F for 30 minutes fat cap down and then turn over to finish cooking. I also made sweet potato wedges at the same time on the bottom rack of the oven.
