How To make Maple Pepper Roasted Pork Loin
1 boneless center-cut trimmed pork loin,
5 pounds, measuring 3 to 4 inches high -- (5 to 5
1/2) and about 18 inches in length 1/2 cup lemon juice
1/4 cup corn oil
6 tablespoons pure maple syrup
3 shallots, thinly sliced
3 cloves garlic, thinly sliced
2 bay leaves
2 sprigs fresh thyme
1 teaspoon lemon zest
1/2 teaspoon freshly ground black pepper
Salt and pepper to season marinated meat Glaze (see recipe) 2 tablespoons melted butter
1/2 tablespoon butcher's-grind black pepper
1/4 cup maple syrup
1 tablespoon lemon juice
Put pork in plastic cooking bag. Combine juice, oil, syrup, shallots, garlic, bay leaves, thyme, lemon zest and pepper. Add to meat in bag. Seal bag, marinate refrigerated overnight or up to 24 hours. Prepare glaze and refrigerate. Bring to room temperature when ready to use.
To roast pork: Preheat oven to 450 degrees. Remove meat from marinade. Discard marinade. Place meat on drain rack over sheet pan. Season with salt and pepper. Place in preheated oven and cook 10 minutes. Baste with glaze and cook additional 5 minutes.
Reduce oven temperature to 350 degrees. Cook 10 minutes, basting once. Continue cooking, basting every 10 minutes, until meat reaches internal temperature of 155 degrees when tested with instant-read thermometer, about 20 minutes.
At this point, pork should be cooked to medium well and will have a hint of pink. If well-done meat is desired, roast can be cooked additional 5 to 10 minutes.
Remove meat from oven and let it rest 15 to 20 minutes before slicing. This will bring the meat's internal temperature up about 10 degrees. Check roast with meat thermometer at this point. If temperature has not reached 160 degrees, return meat to oven until it reaches that temperature. Slice into 32 equal slices to make 16 servings. Place sliced meat on serving tray. Serve with corn potatoes and chutney. Makes 16 servings.
Note: Roasts that are thicker and shorter in length should be cooked longer to bring them to 155 degrees internal temperature. Let rest about 20 minutes before slicing.
Make Glaze: Mix all ingredients and use the mixture to baste meat. Glaze should be at room temperature when used.

Maple Pork Tenderloin Recipe
This is a family favourite. A very flavourful, sweet, mildly spicy sauce that goes very well with the lean tenderloin. I found this one in the Looneyspoons cookbook by Janet Podleski (available on Amazon last time I checked), wonderful easy recipes in there.
1 1/2 pounds pork tenderloin
1/2 cup pure maple syrup (the Aunt Jemima variety of syrup will be almost as good)
2 tbsp soy sauce
2 tbsp ketchup
1 tbsp Dijon mustard
2 tsp grated orange peel
1 1/2 tsp curry
1 1/2 tsp ground coriander
1 tsp Worcestershire sauce
2 cloves of garlic, minced
Trim pork of visible fat. Place pork in a large heavy duty resealable plastic bag. Whisk together all remaining ingredients in a medium bowl. Pour over pork in bag. Seal bag and allow to marinate in fridge for 1 hour.
Transfer pork and marinade to a small roasting pan or baking dish. Roast uncovered at 350F for 40 minutes. Pork should be still slightly pink in the middle.
Let pork stand for ten minutes before slicing. Slice thinly. Drizzle extra sauce over pork and serve.
**you can also skip the marinating time and just pour the sauce over the meat and put it in the oven. I find very little taste difference between the two methods.**

Maple Glazed Pork Tenderloin
This is how I like to grill a pork tenderloin. Mix up a maple rosemary glaze and grill on the Weber Kettle. Grilled pork tenderloin on a charcoal grill has always been a go to of mine when testing seasonings or sauces. It's somewhat quick and always delicious. Try out this pork tenderloin recipe next time you're looking for something sweet and savory.
Glaze:
1 C maple syrup
3 tbsp Dijon mustard
1 tbsp balsamic vinegar
dash of your favorite hot sauce
sprig of rosemary
Meat:
Pork tenderloin
favorite all purpose seasoning
Mississippi Grit is on top of my list
Grill:
Set up for 2 zone cooking
grill for 3-4 minutes per side over coals. Move to cool zone and baste until internal reaches 140°
That's it. Cook up some waffles and enjoy.

Ontario Pork Cooking: Pork Tenderloin with Maple Pepper Coating
Recipe:
Yield: Serves 6
Preparation Time: 5 minutes
Cooking Time: 15-20 minutes
Ingredients
2 Oontario pork tenderloins, well-trimmed, about 12 oz (375 g) each
2 Tbsp (30 mL) Maple syrup
3 Tbsp (45 mL) Dijon or grainy mustard
1 Tbsp (15 mL) Canola oil
1 tsp (5 mL) Coarse black pepper
Cooking Instructions
1.Combine ingredients and spread mixture over Pork on all sides.
2.On BBQ: Preheat barbecue on high; reduce heat to medium. Place Pork on a greased grill and cover for about 15 to 20 minutes or until internal temperature registers 155°F (68°C). Remove to a cutting board. Tent loosely with foil. Let rest 5 minutes before slicing.
