How To make Machacado(Mexican Mashed Beef Filling For Flour Tortillas)
3 lg Skirt steaks, cut into
-2-inch wide strips And long enough to fit in -skillet lengthwise, Scored at 2-inch intervals 2 tb Oil
6 Bell peppers, cut in half
-and seeded 8 lg Tomatoes, cut in half
13 Cloves garlic
Salt In a deep skillet, brown meat in oil, a few pieces at a time. When all meat is browned, return to pan. Add peppers, tomatoes with skin side up and garlic. Season with salt. Cover pan and cook over low heat about 1 hour or until meat os fork tender. Let cool. When cool enough to handle, shred beef and put in bowl. Take remaining ingredients in pan and puree in blender or food processor, a little at a time. Return pureed mixture and meat to skillet. Heat until mixture is bubbling, reduce heat and simmer approximately 30 minutes more. Test for any seasoning adjustments. Should have a good garlic flavor. Add more fresh, pressed garlic if necessary. Serve with hot flour tortillas. Can be scrambled with eggs for breakfast tacos. Can be frozen. Beef Cheek Tacos
Beef Cheek Tacos can be fall apart tender or crispy like pork carnitas. In this recipe I show you how to make them fall apart tender with crispy edges for a nice texture. Beef cheeks are fairly inexpensive, but full of flavor. They can be a real treat, but only if you cook them right. Check out my method on the Weber Kettle.
Cucumber Salsa Recipe:
2 Cucumbers
1 Tomato
Juice from 1 lime
1/2 cup of cilantro
Salt and Pepper to taste
Braising Liquid:
1 Cup Water
3 New Mexico Chiles
1 clove crushed garlic
1 1/2 tsp Cumin
Chop the cucumbers and tomatoes into 1/4 inch pieces. Loosely chop the cilantro (or coriander if that is what you call it ;) ) Add the juice of one lime and then add a bit of salt and pepper to taste. Serve immediately. This recipe has a freshness that cuts through the richness of the beef cheeks and I prefer it over other salsas in this dish.

Many Mexican grocery stores sell carne seca, large pieces of dried beef (what we’d call jerky). Sometimes the meat will have been run through a machine to tenderize it, but it’s not as nearly as tender as the jerky that’s typically sold as snacks for a U.S. audience.
The Mexican stuff is intended to be pounded or milled into a fluffy-looking ingredient that’s called machaca, from the Spanish verb machacar, to pound or mash. In the arid north of Mexico, where dried beef is commonly on the menu, many cooks are used to wrestling planks of carne seca into user-friend machaca.
North of the border, we are not, so I encourage you to buy the already-pounded/milled stuff from a Mexican grocery or online. I've included a few sources below...

Ingredients:
6 Flour tortillas
1 Onion, chopped
2 cloves Garlic, crushed
1½ lb. (675g) Ground beef
2 tablespoons (30g) Tomato paste
1 teaspoon Salt
1/2 teaspoon Black pepper
1/4 teaspoon Red chili flakes
1/2 teaspoon Cumin
1 teaspoon Paprika
1 teaspoon Oregano
8 oz (225g) Cheddar cheese or any other cheese of your choice
Cilantro
3-4 tablespoons Oil
3 tablespoons Water/beef stock
Directions:
1. In a large skillet or a pan, heat 2 tablespoon of oil. Add chopped onion and sauté over low heat for 4-5 minutes. Add crushed garlic and sauté for 1-2 minutes. Add ground beef, cook, breaking it apart, for 4-5 minutes. Add tomato paste, seasoning and cook, stirring for 2 minutes. Add water/beef stock stir and cook for 2 minutes. Turn the heat off.
2. Heat a large skillet over medium-low heat. Brush each tortilla with 1 teaspoon of oi (only one side). Sprinkle about 2 tablespoons of shredded cheese on one side of each tortilla. Sprinkle some ground beef mixture over the cheese, then some cilantro, and extra cheese. Fold tortilla over, place in the hot pan.
3. Cook for about 2 minutes on each side, until golden brown and cheese is melted.
4. Cut quesadillas into wedges and serve with guacamole (recipe: or your favorite dipping.
