How To make Lima Bean Soup
1 lb Frozen lima beans
3 1/2 c Sliced carrots
3 tb Olive oil
5 ea Green onions, finely chopped
5 c Chopped mushrooms
1 ds Basil
1 ds Black pepper
1 ds Cayenne
3/4 c Soy sauce
Cook lima beans in water according to packet instructions. Steam carrots till tender. Drain reserving cooking water. Heat oil in a skillet & saute green onions & mushrooms until tender. Add spices & saute for a further 1 minute. Combine all ingredients (except milk) along with 1 cup of bean & carrot water. Using a blender, blend in batches till smooth. Pour mixture into a large soup pot. Add milk. Cook slowly for 15 to 20 minutes. Source Unknown

1 large Smoked Turkey Leg or Ham Shank
8 - 9 cups Chicken Stock or Broth, can use 2 tbsp of either Better than Turkey or Chicken Bouillon
Salt and Pepper to taste
How to Hot Flash Beans
Clean and sort your beans.
Rinse in a colander with cold water. Add the beans to a large pot and cover them with about 2 inches of water. Bring the water to a boil over high heat, leave the pot uncovered and cook the beans for about 5 minutes. Remove pot from the heat and soak the beans. Let the beans soak in the hot water for 1 hour. Drain the beans into a colander, rinse and then cook according to your this recipe. Enjoy!

How to Cook Lima Beans
Lima beans have 7-8 grams of protein per 1/4 cup of dried beans. If you eat a cup of cooked beans it would certainly equal the protein in a meat product. They are loaded with many nutrients and lots of fiber. So very healthy.

Lima Beans with Smoked Ham Hocks | #SoulFoodSunday | Crockpot Recipes - Welcome back to another #SoulFoodSunday (week 2), home od the Best Crockpot Meals. This is another Slow Cooker recipe to add to your Crock Pot Recipes playlist. Today for the virtual youtube potluck I will be bring Lima Beans with Smoked Ham Hocks served over some rice and some Cornbread Muffins with Corn Tidbits in them compliments of Cooking with Kultral Kreations (link to their muffin video is down below).

Cook Time - High for 4 hours or Low for 7 hours
Ingredients
1 lb. bag Dried Lima Beans
6 cups Chicken Broth
1 tsp minced Garlic (optional)
1 - 3 Smoked Ham Hocks
1 or 2 medium Onions chopped (white or yellow)
1 tsp Salt
1 green Bell Pepper roughly chopped
1 tsp Black Pepper

Cornbread Muffins Recipe
Ingredients
1 c of cornmeal (Aunt Jemima Self Rising Yellow Cornmeal Mix)
1 c of all purpose flour
3/4 c of sweet whole kernel corn- drained
4 tbsp of sugar
3 tbsp of vegetable oil
2 whole eggs
1 1/2 c of whole milk
Instructions
Pre-heat oven to 400 degrees. Grease muffin pan.
In a large bowl, add cornmeal, flour and sugar. Mix together.
Add eggs, oil and milk. Mix well.
Drain liquid from the corn and reserve the kernels.
Add corn to bowl and mix together.
Pour 1/2 c of the mixture into each corn muffin section.
Bake for 20 minutes or until golden brown.
Notes:
Muffins will not be golden brown. Broil for a few seconds if a golden brown color is desired. Makes 12 muffins.
