Delicious Pulled Pork Cooked Entirely In Your Dutch Oven
This delicious pulled pork recipe is, imho, the best way to create this classic dish. Why? Because we re-infuse it with the fat that others normally throw away. Enjoy!

Stacked “Porketta” Sandwich I Marcus Meacham
You can't go wrong with piles of pork belly and pork shoulder. Especially piled onto sandwiches!
INGREDIENTS:
1 pound pork belly
Salt, to taste
Pepper, to taste
2 pounds pork shoulder, cut into baseball-sized chunks
1/2 white onion, chopped
9 cloves garlic
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
2 tablespoons oregano
1 cup white wine, divided
5 cups vegetable stock
1 bunch rapini
1 cup red wine vinegar
For assembly:
3 large brioche buns
Lemon garlic aioli
1 block white cheddar, cut into random chunks
STEPS:
1.) Pork belly: score the fatty side of the belly and rub with salt and pepper. Place on a baking sheet lined with a wire rack and roast at 450°F for 30 minutes. Drop the temperature to 250°F and continue roasting for an hour and fifteen minutes. Let rest for 10-15 minutes before slicing.
2.) Pork shoulder: in a hot, oiled Dutch oven, sear baseball-sized pieces of pork on all sides. Remove from pan. Add half of your chopped onion and 5 cloves garlic and cook until translucent. Add fresh rosemary, thyme and oregano. Reglaze with 1/2 cup white wine, then add pork back to the pan. Cover with vegetable stock, reserving some for the rapini. Cover pot with lid and let simmer for 1 hour until pork is fork tender.
3.) Rapini: sweat remaining onion and garlic until translucent; season to taste with salt and pepper. Once spices are fragrant, fold in rapini. Season with salt and pepper and add remaining vegetable stock, remaining white wine and vinegar. Simmer until greens are tender, 30-40 minutes. Once tender, season with the zest and juice of one lemon. Remove from heat and roughly chop.
4.) To assemble: spread lemon garlic aioli on bottom bun. Add cheddar chunks, then pork shoulder, then rapini, then 3 pork belly slices and more rapini. Spread lemon garlic aioli on the top bun and place on top. Enjoy!

INGREDIENTS :
*2 pounds of flank steak cut against grain into thin slices
* 2 bell peppers cut into bite size pieces
* 1 large onion
* 3 cloves of garlic minced 1/2 thumb size ginger minced
* 6 tablespoons oil (1/3 for marinade, 1/3 for stir frying of steak, 1/3 for stir frying vegetables)
* 1&1/2 tablespoon of honey
* 1/2 tablespoon chicken seasoning (substitute with all purpose seasoning)
* Pinch each of crushed black pepper for marinade, and slurry
* 1/2 cup of water
* 2 tablespoon of soy sauce (1/2 light and 1/2 dark)
* 3 tablespoons corn starch (1/2 for marinade, 1/2 for slurry)
Instructions
1. Marinate meat for 20-30 minutes prior to cooking.
2. Place skillet on medium heat, add oil, wait till oil is sizzling hot and place steak in batches,
spread out in pan for 2 minutes on each side, to obtain a sear/caramelization.
3. Transfer cooked steak to a bowl to stop cooking. Repeat this process till all steak is cooked.
4. Proceed with cooking vegetables in a wok by adding remaining oil to wok in high heat. Add
remaining garlic and ginger, crushed black pepper and salt, stir and cook for under 30
seconds. Add vegetables and cook to your preferred crunch/done-ess.
Notes: I cooked the vegetables not exceeding 1 minute. Add slurry (combination of water, corn starch, soy sauce, garlic and ginger), stir till thickened. Add cooked steak and stir to combine. Remove wok from heat and serve with rice.

This method of cooking mushrooms can be applied to so many different recipes, I hope you give it a try and enjoy this delicious dish that can easily be modified to accommodate a vegetarian or vegan diet.
Recipe amounts; makes 8-10
2.5-3 lbs king oyster mushrooms
1/3 asian pear
1/2 white onion
half inch piece of ginger
3 stalks of green onion
4 tbsp soy sauce
4 tbsp brown sugar
2 tbsp sesame oil
1 medium carrot
1/4 daikon raddish
2 tbsp sesame seeds
500-750 ml jar of kimchi
1/4 head of kale
1/2 bunch of mint and basil
