Bailey's Buttercream Frosting
Bailey's Frosting is the perfect icing for any of your St. Patrick's Day cakes and cupcakes. Since it uses real Bailey's Irish Cream in this buttercream recipe, this one is just for the adults. But I do share a method for making a non-alcoholic Irish Cream buttercream Icing in the post, too. Get all the details here:
Chocolate Cupcakes with Irish Cream Frosting
Rich, chocolaty and with a divine moist interior, these Chocolate cupcakes with Irish Cream Frosting are simply amazing. The cream cheese frosting with a hint of Irish cream tastes awesome and goes so well with the chocolate cupcakes. Perfect way of celebrating St Patrick's Day or any special occasion.

Ingredients
Makes 12 cupcakes
3/4 cup (95g) all-purpose flour
1/3 cup (40g) cocoa powder
1/2 tsp (2g) salt
1/2 tsp (2g) baking powder
1/4 tsp instant coffee
1/3 cup (75g) unsalted butter, melted
2/3 cup (135g) sugar
3 eggs
1 tsp (5g) vanilla extract
2/3 cup (150g) sour cream
3 oz (80g) semisweet chocolate, melted
Irish Cream Frosting
9 oz (250g) cream cheese, room temperature
1/2 cup (60g) powdered sugar
3 tbsp (40ml) Baileys Irish Cream
2/3 cup (200g) whipping cream, 35% fat
1. Preheat the oven to 350°. Line a muffin pan with paper liners.
2. In a medium bowl combine the flour, cocoa powder, instant coffee, baking powder and salt.
3. In another bowl mix the butter and sugar until thick and creamy. Add eggs, one at a time, vanilla extract and mix to combine.
4. With the mixer on low, alternate adding gradually flour mixture and sour cream until all is well incorporated.
5. Add the melted chocolate and mix to incorporate.
6. Scoop batter evenly among liners, about 2/3 full each.
7. Bake for 18- 20 minutes or until a toothpick inserted into the center comes out with a few crumbs.
8. Let them cool on the pan for about 5 minutes, then remove to a cooling rack to cool completely before frosting.
9. Prepare the cream cheese frosting: In a bowl, beat cream cheese and then incorporate powdered sugar. Add Baileys Irish cream and mix to combine. In another bowl whip the cream with an electric mixer until it forms stiff peaks. Gradually fold together.
10. Place the frosting into a piping bag fitted with a (11mm) open star tip and pipe cupcakes.
11. Decorate with cocoa powder if desired.
12. Serve immediately or refrigerate until ready to serve. If refrigerated let them get to almost room temperature before
serving.

Irish Cupcakes with Baileys Irish Cream Frosting cheekyricho tutorial
cheekyricho Little Green Cupcakes with Baileys Irish Cream Frosting. Perfect for that green themed Party or Saint Patricks Day Celebration. We made this in the Thermochef but a mixer or blender would be just as easy because this is a one bowl mixture.We do hope you give it a try.
Cupcake Ingredients: Makes 12
2 eggs
180g fresh cream (pouring or heavy)
200g Self Raising Flour
2 teaspoons Vanilla Extract
100g Caster Sugar
FOR THE BAILEYS IRISH CREAM FROSTING:
30g butter
30g Baileys Irish Cream
200g sifted Icing Sugar or confectioners sugar.

Chocolate Stout Cupcakes with Irish Cream Frosting
For the cupcakes:
1 cup Irish stout
1 cup butter, softened
¾ cup cocoa powder
1 cup brown sugar
1 cup granulated sugar
2 cups flour
1½ tsp baking soda
½ tsp salt
2 eggs
¾ cup sour cream
For the frosting:
¾ cup butter, softened
3-4 cups icing sugar
3 tbsp Irish cream liqueur
In a small saucepan, heat Irish stout and butter over medium-low until the butter is melted completely.
Turn off the heat and whisk in cocoa powder and brown sugar. Let
mixture cool.
In a bowl, mix flour, sugar, baking soda and salt until well combined.
Using a hand mixer or stand mixer, combine stout mixture with eggs
and sour cream.
Scoop batter into muffin tin lined with cupcake liners.
Bake at 350°F for 20-25 minutes.
Allow to cool completely before icing.
For the frosting, beat butter until light and fluffy.
Slowly add icing sugar and mix on low until frosting has come together.
Add Irish cream liqueur and mix until combined.
Transfer to a piping bag.
Pipe frosting onto each cupcake.
Finish with a dusting of cocoa powder.
Enjoy!!
Homemade Irish Cream
1 tsp espresso powder OR instant coffee granules
1 tbsp cocoa powder
½ cup heavy cream
1 can sweetened condensed milk
2 tbsp sugar
1 tsp vanilla extract
½ cup Irish whiskey (optional)
In a large mixing bowl, combine instant espresso and cocoa powder with 1 tablespoon of cream. Whisk until it forms a smooth paste.
Add the remaining cream, condensed milk, vanilla extract and Irish whiskey.
Transfer to jar and store in the refrigerator.
Enjoy in coffee or hot chocolate!
