How to Make Samosa | Perfect Samosa Recipe

This recipe makes 12-14 samosas
Ingredients:
For the dough:
2 cups (250g) Flour
1/4 cup (60ml) Oil or melted ghee
1/4 cup (60ml) Water
1/2 teaspoon Salt
For the filling:
2 tablespoons Oil
3 Potatoes, boiled (500g)
1 cup (150g) Green peas, fresh or frozen
2 tablespoons Coriander leaves, chopped
1 Green chili, finely chopped
8-10 Cashews, crushed (optional)
2-3 Garlic cloves, crushed
1 tablespoon Ginger paste
1 teaspoon Coriander seeds, crushed
1/2 teaspoon Garam masala
1 teaspoon Chili powder
1 teaspoon Cumin seeds
1 teaspoon Turmeric
1 tablespoon Lemon juice
Salt to taste
1/4 cup (60ml) Water
Directions:
1. Make the dough: in a large mixing bowl, mix flour and salt. Add the oil and then start mixing with your fingers, rub the flour with the oil until the oil is well incorporated. Once incorporated, the mixture resembles crumbs.
2. Start adding water, little by little and mix to form a stiff dough (the dough shouldn’t be soft). Cover the dough and let rest for 30 minutes.
3. Meanwhile make the filling: roughly chop/mash boiled potatoes, set aside. Heat oil in a large pan, add cumin seeds, coriander seeds, chili powder, turmeric and garam masala, cook for 30-60 seconds to release the flavours. Add crushed garlic, ginger paste, chopped green chili and cook for 1 minute. Add chopped onion and sauté for 3-4 minutes. Add chopped potatoes, green peas, lemon juice, water and salt, cook for 4-5 minutes, stirring frequently. Add crushed cashew and cook for 1 minute more.
4. Turn the heat off, add chopped coriander leaves, stir well and set aside to cool.
5. Shape the samosas: Once the dough has rested, give it a quick knead. Then divide the dough into 6-7 equal parts. Shape into balls.
6. Start working with one ball at the time, keep the remaining dough balls covered all the time. Roll out each ball into an oval, about 6-inches long and 4inches wide. Then cut it into two parts. Coat the edges of each semicircle with water. Pick the two corners of the semicircle and bring them together, edges overlapping slightly, to form a cone. Press down on the seam to stick it. Fill the samosa with the potato filling, around 1-2 tablespoons. Don't overfill the samosa. Now, brush the edges again with water, then pinch the edges and seal the samosa. Repeat same process with the remaining dough and filling, keep filled samosa covered with a moist kitchen towel while working.
7. Fry the samosa: heat oil to 350F (175C). Drop the samosas into hot oil, 4-5 pieces at the time. Reduce the heat to medium. Fry for 4-5 minutes, until golden and crisp.
8. Drain on paper towels before serving. Serve with your favorite sauce.
Notes:
• Traditionally samosa dough made with ajwain seeds (carom seeds), I couldn’t find it, so I skipped this step. I you want use ajwain seeds, add it the flour mixture when making the dough.
• Don’t fry the samosas in too hot oil. Add the samosa to hot oil (350F/175C), after 1 minutes, reduce the heat to medium-low.
• If you want to bake the samosas: brush each samosa generally with oil. Bake in preheated 350F (175C) for 30-40 minutes, until golden.
• You can freeze the samosa after filling and shaping it.

PUNJABI STYLE SAMOSA
Preparation time 10 minutes
Cooking time 20-25 minutes
Serving 4
Ingredients
For Dough
1 cup Maida , मैदा
Salt to taste , नमक स्वादानुसार
½ tsp Carom seeds , अजवाइन
2 tbsp Ghee , घी
Cold water as required , ठंडा पानी
For Samosa Masala
1 tbsp Coriander seeds , धनिया के बीज
1 tbsp Fennel seeds , सौंफ़
½ tbsp Cumin seeds , जीरा
For Samosa Filling
1 tbsp Ghee , घी
1 inch Ginger, chopped , अदरक
2 fresh Green chillies, chopped , हरी मिर्च
10-12 Raisins , किशमिश
1 tsp Turmeric powder , हल्दी पाउडर
½ tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
¼ tsp Asafoetida , हींग
4-5 Potatoes, boiled & slightly mashed , आलू
¼ cup Green peas , हरे मटर
1 ½ tbsp Prepared Masala , तैयार किया हुआ मसाला
½ tsp Black pepper powder , काली मिर्च पाउडर
1 tsp Dry Mango powder , आमचूर
Salt to taste , नमक स्वादानुसार
Process
For Dough
In a bowl add maida, salt, carom seeds, ghee and mix everything properly until it resembles bread crumb consistency.
Now add cold water and knead a hard dough. Cover and keep aside for resting at least for 15-20 minutes.
For Samosa Masala
In a pan add coriander seeds, cumin seeds, fennel seeds and roast them lightly.
Transfer them into a motor-pastel and crush them coarsely and keep aside for further use.
For Samosa Filling
In a pan add ghee, ginger, garlic, green chillies and saute for a minute.
Now add raisins, turmeric powder, degi red chilli powder, asafoetida, potatoes, green peas and mash it coarsely, mix everything properly and cover and cook for 4-5 minutes on medium heat.
Now remove the cover and cook on high flames for 3-4 minutes or until light charred.
Add the prepared masala, black pepper powder, dry Mango powder, salt and mix everything properly. And keep aside for further use.
For Assembling Samosa.
Take a medium portion of the dough, make a round peda and roll it thin in an oval shape.
Now cut in from the centre and take one half of it and make a cone shape of it and add the filling in it.
Now apply water on the open ends of the cone and fold it towards you, keep it down and give it a gentle press so that it can stand, make all others in the similar way.
Heat oil in a kadhai on medium heat and fry the samosas in it until golden brown from all sides, remove on an absorbent paper. Serve hot with tomato ketchup.

Easy Tortilla Samosas (The ultimate hack for perfect crispy samosas!)
Who knew that a tortilla would make for the most perfect samosa wrapper? These samosas are ultra crispy and have the most delectable spiced potato and pea filling.
Also, they're made in an air-fryer, and take no time to fry up. Be sure to serve them with my 4 Ingredient Tamarind Chutney (recipe also up on the channel!)
INGREDIENTS
2 medium potatoes
2 tsp cumin seeds
2 tsp coriander seeds
1 tsp amchur powder
1 tsp anardhana powder (pomegranate powder)
1 tsp garam masala
½ tsp kashmiri chili powder
1 tbsp melted ghee
Salt to taste
½ cup frozen peas
¼ cup chopped fresh coriander
3, 10 inch flour tortillas
⅓ cup all purpose flour
3 tbsp water
¼ cup canola oil
METHOD
Wash and dry potatoes. Using a fork, pierce the potatoes several times. Place on a microwave-safe plate and cook on high for 4 minutes. Then carefully flip the potatoes over and cook for an additional 3 minutes on high or until fork-tender. Allow to slightly cool, then peel and set aside.
To a dry frying pan on medium heat add cumin, and coriander. Toast for 2-3 minutes or until fragrant. Transfer to a mortar and pestle and grind until coarse in texture.
Crumble potatoes into a bowl and season with toasted spices, amchur, anardhana, garam masala, chili powder, ghee and salt to taste. Mix and mash the potatoes with the spices. Then fold in frozen peas, and coriander until well mixed.
Add flour and water to a bowl and mix to form a thick paste.
Stack tortillas, and slice them down the middle to create two even halves.
Spread flour paste alongside the length of the cut side of the tortilla. Lift the right side of the tortilla, and roll it inwards to form a triangular pocket with the other side. Press the edges to seal with the paste.
Stuff the pocket with the potato mixture, leaving a little bit of space on the top. Spread more of the paste along the inside edge of the opening, then press both sides of the tortilla to seal. Repeat with remaining tortillas.
Brush both sides of the tortilla generously with canola oil, and then evenly space within an airfryer basket. Bake for 10-12 minutes at 400 degrees fahrenheit until golden and crispy.
Serve with your favourite chutneys. Enjoy!
