SIMPLE Cheesy Bacon Chicken Recipe | 1 Minute Recipes

CHEESY BACON CHICKEN WITH MUSTARD SAUCE
INGREDIENTS
MUSTARD MARINADE
1/2 cup mustard yellow
1/2 cup honey
1 teaspoon vegetable oil
1/2 teaspoon lemon juice
CHICKEN
4 boneless skinless chicken breasts
1 tablespoon vegetable oil
1 teaspoon salt
8 slices bacon cooked
1 teaspoon pepper McCormick's Peppercorn Medley Grinder works amazingly
2 cups shredded Monterey Jack cheese
INSTRUCTIONS
MARINADE
In a medium bowl, combine mustard, honey, oil, and lemon juice. Using a fork or small whisk, mix for about 30 seconds or until all ingredients are well mixed.
BACON
Place 8 pieces of bacon on a baking sheet lined with foil and bake for about 15 minutes at 425 degrees F. When bacon is done (slightly crispy but not burnt, you will be baking it again later) remove from oven and set aside to cool. (This can be done well in advance)
CHICKEN
1. Place chicken breasts on a large plate or small baking dish. Pour 2/3 of the marinade over the chicken. Cover with plastic wrap and place in the refrigerator for at least 2 hours.
2. Chill the remaining marinade until later.
3. When you are ready to prepare the chicken, preheat the oven to 375 degrees F.
4. Season the chicken with salt and pepper.
5. Place skillet on the stove over medium-high heat and pour in oil. Cook the chicken in the pan for 3-4 minutes per side or until golden brown. (seared- you will be baking it more)
6. Turn heat off and remove skillet.
7. Brush each seared chicken breast with a little of the reserved extra honey mustard marinade, being sure to save a little extra that you can serve on the side later with the dish.
8. Stack two pieces of cooked bacon on each chicken breast.
9. Spread 1/2 cup of Monterey Jack cheese into each breast.
10. Bake the skillet of chicken for 5-7 minutes or until the cheese is thoroughly melted and chicken juices run clear.
11. Put extra honey mustard marinade into a small bowl to serve on the side.

Serves: 4
Ingredients (US & METRIC):
2 tbsp olive oil
100g/ 3 ½ oz smoked streaky bacon, roughly chopped
6 bone on chicken thighs, with skin on
1 tbsp butter
Grated zest of 1 lemon
A few thyme sprigs
75ml/ 2 ½ fl oz white wine
50oml/ 17 fl oz chicken stock
650g/ 23 oz rooster potatoes, quartered
200g/ 7 oz frozen peas
6 spring onions, trimmed and sliced in half
4 baby gem lettuce, sliced in half
Sea salt and freshly ground pepper

Ingredients:
600 g chicken breasts
5 tbsp soy sauce
2 tbs honey
1 tbsp mustard paste
1 tbsp minced garlic
1 tbsp paprika powder
1 tsp salt
1 tsp white pepper powder
4 tbsp water
2 tbsp Oil
Spring onion
Method:
Combine the soy sauce, honey, mustard paste, minced garlic, paprika powder, salt, pepper powder, and water in a small bowl.
Mix well, and keep that aside.
Clean and cut the chicken breasts, pour the sauce over the chicken, and coat well.
Cover and let the chicken rest for 30 minutes.
Once the chicken has marinated, heat oil in a pan over medium-high heat.
Add the chicken, cover, and cook on medium-high heat for 5 minutes.
Remove the lid and flip the chicken, again cover and cook the chicken for 5 more minutes.
Now, flipping the chicken occasionally, cook until golden brown on all sides.
Garnish with chopped spring onion, if desired.
