Recipe: Honey Fried Chicken and Asparagus Vinaigrette
Chicken Ingredients:
3 pounds meaty chicken pieces
3/4 cup honey
3/4 cup buttermilk baking mix -- or more
2 teaspoon dry mustard
1/2 teaspoon paprika
Salt and pepper -- to taste
Vegetable oil
Directions:
Coat chicken with honey; set aside. Combine buttermilk baking mix, mustard, paprika, salt and pepper; dredge chicken in mixture. Heat 1/2 inch oil to 375ºF in a 12-inch skillet over medium heat. Carefully place chicken in hot oil and cook about 5 minutes or until underside of chicken is golden; turn chicken pieces and cook about 5 minutes, turning as needed. Reduce heat to low and cook 7 to 10 minutes longer or until juices run clear. Remove chicken; drain on paper towels.
Asparagus Ingredients:
2 pounds fresh asparagus -- trimmed
3 tablespoons olive oil
2 tablespoons lemon juice
2 teaspoons Dijon-style mustard
1/2 teaspoon ground black pepper
1/4 teaspoon salt
4 tablespoons buttered and toasted bread crumbs
1 cup cherry tomatoes -- halved
Steam or saute asparagus spears until tender; drain and place on serving platter. In small jar with tight-fitting lid, shake together the oil, lemon juice, mustard, pepper and salt. When ready to serve (can be served warm or at room temperature), pour vinaigrette evenly over asparagus, sprinkle with bread crumbs and garnish with cherry tomato halves.

HONEY MUSTARD CHICKEN SALAD

Ingredients
2 Boneless chicken breasts
Mixed pack of lettuce
1 tablespoon whole grain mustard
2 tablespoons soy sauce
2 tablespoons honey
Salt
Black pepper
2 Slices of bread
6 cloves garlic
Vegetable oil/ Olive oil
Salad Dressing
2 tablespoons mayonnaise
2 tablespoons ketchup
1 teaspoon Worcestershire sauce
Start by mixing the dressing ingredients together and set aside.
Follow by mixing the mustard, soy, honey and 4 cloves minced garlic together in a bowl. Season the chicken with salt and pepper and put in the marinade. (Good thing about this marinade is that you don’t have to put it for any time, just mixing it well will do)
Heat a bit of oil on a pan and add the fillets to cook. Use tongs to turn them and make sure they cook on both sides without drying out.
In the meantime as they cook, cut up the bread into cubes. Lay out on a baking tray with 2 cloves minced garlic and bake in the oven for 2 min until toasted. You can use olive oil on the bread if you have any.
Once everything is ready, wash salad greens and pat dry them with a kitchen towel. Slice the chicken and plate the salad. Greens at the bottom, chicken slices, garlic croutons, then the dressing.
