White Gravy Recipe
1⁄2 cup bacon, sausage, or other meat grease
5 tablespoons all-purpose flour
1 1⁄2 to 2 cups milk, warmed
Salt and black pepper
1. Heat the grease over medium heat in a large cast iron skillet.
2. Sift in the flour and let it come to a boil for 2 minutes, stirring and mashing down constantly with a flat spatula.
3. Slowly stir in 1 to 1 1/2 cups of the milk and bring back to a light boil. Continue stirring until the mixture is smooth and reaches the desired consistency, about 2 minutes. You can add more milk or water to thin the gravy, if necessary.
4. Season with salt and pepper to taste. Serve hot.
TIP: A lot of times on ranches I use canned milk, which gives a very rich flavor, but sometimes I add a little water to thin it. You can also use heavy cream for a richer taste.

Chicken Fried Steak & Country Gravy
Home style chicken fried steak & country gravy.

Ingredients:
2 Cubed Steaks
2 cups self-rising flour
1-2 teaspoons salt
1 teaspoon pepper
2 teaspoon garlic powder
1 tablespoon chicken bouillon granules
2 tablespoons corn starch
1 egg
2 cups buttermilk * (buttermilk substitute 2 cups milk with 2 tablespoons white vinegar)
(dip steaks in buttermilk, flour, then buttermilk & flour again, then rest for 10-15 minutes)
Fry in 1 1/2 inches of oil at 350 f
Make gravy from small amount of pan oil
2-3 tablespoons oil
2-3 tablespoons flour
1-2 cups milk
Salt & pepper to taste

BISCUITS
- 2 Cups Flour
- 1/2 Tsp Sugar
- 1 Tsp Salt
- 1.5 Tsp Baking Powder
- 3/4 to 1 Cup Buttermilk ( Milk can be used too)
- 1 Stick Butter, Frozen (Grated or Cubed)
GRAVY
- 1 Lb Breakfast Sausage (Pork or Turkey)
**** If using turkey sausage, add in 1 Tsp Butter, Seasoned Salt, Black Pepper, and Crushed Red Pepper all to taste for additional flavor)
- 2 Cups Whole Milk
- 2 Tbsp Butter
- 2 Tbsp All Purpose Flour
- 1/2 Tsp Onion Powder
- 1/2 Tsp Garlic Powder
- 1 Tsp Black Pepper
- Salt to TASTE

Greetings! I needed to break in that new cast iron skillet so I decided to make sausage gravy and biscuits for breakfast. This is the way I always knew how to make sausage gravy. Good old fashioned, stick to your ribs cowboy food! Quick and easy and with few ingredients. If you pick up a couple pounds of bulk sausage here and there, you will always have what you need on hand to make this.
This could also be made from your food storage using powdered milk that has been prepared, freeze dried sausage crumbles, flour and canned butter or bacon fat. The biscuits are also able to be done from food storage as well.
You can see how I make biscuits here:
You can make country gravy by leaving out the sausage and starting with a 1/4 cup of butter or bacon fat or a combination of the two. That is perfect with lots of cracked black pepper over country fried steak or chicken.
I hope you will give this hearty breakfast a try! I even make it for supper sometimes!
