No cooking oil, stir fry with water! Bacon cabbage stir-fry! 培根手撕莲白
This simple Chinese cabbage stir fry is a tradition in my family, My grandma used to make it all the time, but she used pork belly. Here I use regular bacon instead because for most of you, pork belly is hard to find. Also you can use Beef or Chicken fat for this dish.
If you are vegan, skip the bacon, just use cooking oil to stir fry the cabbage.
The Sauce:
2 tbsp soy sauce
1 tbsp Chinese vinegar
1 tsp Sugar
Pinch of Salt
1 tsp Corn starch
1 tbsp water
You also need :
The cabbage I use is a flat pumpkin-shaped cabbage (sometimes known as Taiwanese cabbage), white cabbage.
5-6 pieces of Bacon
1/2 tsp Sichuan pepper corn
6-7 Dried chili peppers

1 Medium onion (Sliced)
1 red bell pepper (Sliced)
1 orange bell pepper (Sliced)
2 cloves garlic (minced)minced
1 medium to large head of cabbage (chopped)
2 tsp all purpose seasoning
1/2 tsp black pepper
Pinch of red pepper flakes

1 2 lb. Head of Cabbage
1 pack of thick cut Bacon

1 or 2 Tbsp of your favorite Cajun or Creole seasoning (Creole Kick)
3 cloves of Garlic, minced
2 Tbsp of Butter (optional)

Southern Bacon-Fried Cabbage - A MUST for New Year’s Day - A Long Time Southern Custom
Southern Bacon - Fried Cabbage
12 thick sliced bacon, cut into chunks
2 large onions, chopped
1 large head of cabbage, cored and chopped
3 teaspoons seasoned salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
Cook the bacon in a large cooker over medium heat until done but not crisp. Remove the bacon to a small plate and drain all but 4-5 tablespoons of the grease from the cooker. Add the onions to the remaining bacon grease and cook about four minutes, until soft, but not browned.
Add the chopped cabbage and stir to coat with the bacon grease. Cook for 4 to 5 minutes, stirring occasionally. Add the seasoned salt, pepper, garlic powder, and onion powder, and stir well to season all the cabbage.
Simmer, covered, on medium-low heat for about 30 minutes, stirring every 10 minutes. Check for doneness. Keep cooking if it’s not quite done. Stir the bacon back into the cabbage, about 10 minutes before the end of the cooking time. Serve immediately. 
NOTE: This is delicious reheated.
