How To make Homemade Banana Layer Cake

2 c All-purpose flour
1 1/2 c Sugar
1 1/2 ts Baking powder
3/4 ts Baking soda
1/2 ts Salt
1 c Ripe banana; mashed (3 med)
1/2 c Buttermilk or sour milk*
1/2 c Shortening
2 Eggs
1 ts Vanilla
Grease and flour two 9x1-1/2-inch round baking pans; set aside. In a large mixing bowl combine flour, sugar, baking powder, baking soda and salt. Add banana, buttermilk or sour milk, shortening, eggs and vanilla. Beat with an electric mixer on low speed till combined. Beat on medium speed for 3 minutes. Pour into prepared pans. Bake in a 350 degree oven 30 minutes or till a toothpick inserted near center comes out clean. Cool on wire racks 10 minutes. Remove frompans; cool completely on rackes. *Note: To make 1/2 cup sour milk, combine 1/2 cup milk with 1-1/2 teaspoons lemon juice or vinegar and let stand 5 minutes before using. Nutrition facts per serving: 294 cal., 11g total fat (3g sat.fat) 36mg chol., 235mg sodium, 47g carbo., 1g fiber, 4g pro. Daily Value: 1% vit. A, 4% vit. C.

This banana cake recipe really takes ‘basic banana cake’ to that next level! The best part is, it really doesn’t take that much more effort – I promise. Moist banana cake layers, filled with a luscious caramel and topped with cream cheese buttercream, this recipe is sure to please the crowd!
INGREDIENTS:
Banana Cake
- 2¼ cups (280 g) flour - regular, all purpose (see note 6 if you want to use cake flour)
- ¼ cup (25 g) cornstarch - also known as cornflour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 tsp cinnamon - ground, powdered
- 3½ large (410 g) bananas - skin removed, make sure they're ripe and soft
- ½ cup (113 g) unsalted butter - room temperature
- ½ cup (105 g) unflavoured vegetable oil - I use canola
- 1½ cups (300 g) white granulated sugar
- 3 large eggs - room temperature
- 1½ tsps vanilla essence/extract
- ½ cup (125 g) Greek yoghurt - room temperature
Caramel
- ½ cup (100 g) white granulated sugar
- 2 tbsp water
- ¼ cup (60 g) cream - room temperature, minimum fat percentage of 34%
- 2 tbsp (28 g) unsalted butter - cold
- 1 pinch salt
Cream Cheese Frosting
- 1 cup (225 g) unsalted butter - room temp
- 4½ cups (570 g) icing/confectioners sugar - use more for a thicker frosting (see note 1)
- 1½ cups (335 g) cream cheese - cold, firm type (see note 2)
- 1½ tsp vanilla essence/extract
- 1½ tbsp lemon juice - must be fresh

BANANA CAKE
3/4 cup corn or canola oil
3/4 cup dark brown sugar
2 pcs whole eggs
approximately 1 1/2 cups (500 grams) peeled overripe bananas
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup heavy cream
2 teaspoons white vinegar
1 cup walnuts, coarsely chopped (optional)
• Grease with butter or vegetable oil shortening, and line with heatproof parchment paper three pieces 7X3 loaf pans
• Bake at 400 F for 15 minutes, then lower the temperature to 350F, and bake for another 20-30 minutes, or until the top exterior of the cake is almost firm to the touch.
NOTE: If you want to use another size of shape of fan, feel free. Just fill the pan 3/4 full, and bake until the cake is almost firm to the touch.

* 4 sticks unsalted butter room temp

- 85 gr Sugar ( 1/3 cup + 1 tbsp)
- 115 gr Ripe Banana pulsed in the food processor ( 1 Banana )
- 100 gr Milk ( 1/2 cup + 1 tbsp)
- 120 gr All Purpose Flour ( 3/4 cup + 1 tbsp)
- 1 tsp Baking Powder
- 1 tsp good Quality Vanilla
- 1/4 tsp Salt
- 1/2 tsp Lemon Juice ( or 1/4 tsp cream of tartar) Add it to the egg whites before adding the sugar.
Custard Cream:
- 330 gr Whole Milk ( 1 1/3 cup )
- 2 medium Eggs
- 90 gr Sugar ( 1/4 cup + 2 tbsp)
- 2 1/2 tbsp Cornstarch
- 1 tsp Vanilla Extract
- Pinch of Salt
