How To make Happy Endings Plum Cake
1 c Butter, sweet
1/4 c Sugar
3/4 c Sugar, brown, dark
2 lg Egg
1 ts Vanilla extract
2 1/2 c Flour
2 ts Baking powder
1 ts Baking soda
1/2 ts Salt
2 ts Cinnamon, ground
16 oz Purple plums, canned
Sugar, confectioners Drain plums well, reserve syrup and chop plums. Preheat the oven to 400 F. In a large mixing bowl, beat the butter until creamy and light, then gradually add the sugars, beating until creamy and smooth. Beat in the eggs, then the vanilla. Sift all dry ingredients together; stir into the butter mixture, alternating with 1/2 cup of the reserved syrup, beginning and ending with dry
ingredients. Stir in the plums. Pour the batter into a greased 9" x 13" baking pan. Bake for 25 to 30 minutes, or until a toothpick

Sugar -1/2 cup caramlization
Hot water . 1cup
Sugar - 1/2 cup powder
Egg .- 3 nos
Oil -1/4 cup
Butter -100gm
Nuts
Dry fruits soaked in orange juice
Honey -1tsp
Garam
masala - 1tsp
Lime juice - 1 tsp
Vanila /Orange Essences -1tsp
Baking soda -1/2tsp
Baking powder -1tsp

Christmas Special Eggless Wheat Plum Cake | ഗോതമ്പ് പൊടി കൊണ്ട് ഒരു പ്ലം കേക്ക്
ഓവൻ , ബീറ്റർ , മൈദാ , മുട്ട , കേക്ക് ടിൻ ഒന്നും ഉപയോഗിക്കാതെ ഉണ്ടാക്കാം ഈ അടിപൊളി കേക്ക്
INGREDIENTS:
[ For Soaking ]
Almonds, cashews, dates, raisins( 3/4 cup)
Orange juice - 1 cup ( can take apple or grape juice instead )
[ For Caramel Solution Preparation]
Sugar - 1/2 cup
Water - 1 cup
[ Other Ingredients ]
Wheat flour - 2 cups
Baking powder- 1 teaspoon
Baking soda- 1/2 teaspoon
Powdered sugar - 1/2 cup ( crush 1 cardamom and 1 clove along with sugar)
Cinnamon powder- 1/4 teaspoon
Oil - 1/3 cup
White vinegar- 1.5 tablespoons ( can use lemon or lime juice instead)
Vanilla Essence- 1 teaspoon ( optional)
PREPARATION:
1. Chop the dry fruits . Add honey and soak it in orange juice for atleast 6 hours. I soaked it overnight.
2. To prepare the caramel solution. Take a pan, put sugar into it. Put it on the stovetop on low flame and allow the sugar to melt. The colour of the sugar starts to change and wait till the caramel changes into a golden brown colour. At that point pour water into the caramel.We will see the caramel hardens. Boil and cook on low flame till the caramel dissolves completely in water. Allow the caramel solution to cool.
3. Take another bowl, put the wheat flour, baking soda, baking powder, cinnamon powder and powdered sugar. Mix well. To this add the soaked dry fruits. Mix well. Dry ingredients are ready.
4. Take another bowl, to the cooled caramel solution add oil and vinegar. Mix well. Wet ingredients are ready
5. To the wet ingredients, add the mixed flour and fold it properly. Add vanilla essence if needed. Cake batter is ready.
6. Take a saucepan or cookeware on which the cake is baked. Grease it with oil and put the butter paper at the bottom. Pour the cake batter and tap a few times.
7. To the 10 mins preheated wide pan, place the closed cookware and bake it for 90 to 120 minutes on low flame.
8. Insert a skewer into the cake and check whether the cake is well cooked. If the skewer comes out clean, cake is well baked. Otherwise not.
9. Allow the cake to cool. It’s best to have 1 to 2 days after baking.
