How To make Gumdrop Fruitcake
4 Cups Flour
Sifted
1 teaspoon Cinnamon
1/4 teaspoon Cloves
1/4 teaspoon Salt
1 Pound White Raisins
1 Pound Large Gumdrops :
(Omit Black)
1 cup Nuts -- Chopped
1 cup Butter
2 Cups Sugar
2 Eggs
1 1/2 Cups Applesauce
1 teaspoon Baking Soda
1 tablespoon Hot Water
1 teaspoon Vanilla
Sift and measure flour. Add spices and salt; sift again. Set aside. Cut gumdrops and add part of dry ingredients to raisins. Add gumdrops and chopped nuts; set aside. Cream butter and sugar. Add well beaten eggs and mix together. Alternating, add the flour mixture and applesauce to creamed mixture. Dissolve baking soda in hot water. Add vanilla and mix into batter. Add floured raisins, gumdrops and nuts. Pour into 2 or 3 loaf pans lined with greased brown paper. Bake at 300F about 2 hours.

Ingredients:
1 cup mixed glazed fruits, chopped
½ cup dried apricots, chopped
½ cup dried cranberries
½ cup dark raisins
½ cup candied orange peel
1 cup walnuts, coarsely chopped
½ cup golden raisins
1 cup pecans
1 cup pitted dates
½ cup green candied cherries
½ cup red candied cherries
¾ cup rhum
1 ½ cup all purpose flour
1 tsp cinnamon
½ tsp allspice
½ tsp nutmeg
½ tsp baking soda
½ tsp salt
½ cup (113g) softened butter, unsalted
1 cup packed brown sugar
3 eggs, medium
⅓ cup molasses
2 tablespoons rhum
*Divide evenly into three 6x3x2.5 loaf pans greased and lined
*Bake in a preheated oven at 165C for 1 hr 30 mins or until toothpick inserted at the center comes out clean (you can opt to bake them using baine marie method for even cooking and prevent the cake from drying out or just bake them longer at lower temperature)
*Cool completely and brush all over with rhum or brandy
*Wrap them individually in aluminum foil and refrigerate. Avoid touching with bare hands to prevent spoilage
*Brush them again with rhum after a week then repeat brushing for four weeks
*To make a chocolate fruit cake, replace 1/2 cup of flour with alkalized unsweetened cocoa powder

We are diving into my vintage recipe book yet again, this time trying out a rather unique twist on a classic fruitcake! How fun!

This cake is quite dense so it is important not to overbake it so it does not crumble. I found this cake interesting and colorful so I was really excited to try it and man...it really tastes like Christmas. Christmas Gumdrop Bundt Cake
Ingredients:
1 1/2 cup salted butter
2 cups sugar
3 large eggs
2 tsp vanilla extract
3 cups flour
1 1/2 tsp baking powder
3/4 cup evaporated milk
2 1/2 cups gumdrops + 1/4 cup flour
Oven: 300F. Bake for 1 hour and 45 minutes. Check the cake on the 50 minute mark and test every 10 minutes. As soon as the toothpick comes out clean, the cake is ready. Do not overbake.

I get it - some people don't like Christmas Cake / Fruit Cake. (Mind you we have an excellent Christmas Cake Recipe: ) This is different, this is a Gumdrop Cake... all the colours give it a festive look, the gumdrops make it fun for the kids, and the pineapple keeps the cake moist. This gumdrop cake recipe is also an alcohol free Christmas Cake recipe alternative.
Ingredients:
1 cup butter
3 eggs
3 cups flour
2 tsp baking powder
16 ounce can crushed pineapple
1½ cup sugar
1 tsp vanilla
½ tsp salt
½ lb baking gum drops
16 ounces glacé cherries
Method:
Cream butter and sugar, then cream in eggs one at a time.
Mix in vanilla.
Mix in flour and baking powder.
Mix in pineapple, then gum drops and cherries.
Bake in a 9”x11” greased pan.
Bake at 250ºF for about 4 hours, or 325ºF for about 2 hours.

Gumdrop Coconut Cake - Bonita's Kitchen
Welcome to Bonita's Kitchen!
Today we will be making Gumdrop Coconut Cake, made with baking gumdrops, coconut and so much more. Recipe below!
Ingredients:
1/2 Cup Butter
1/2 Cups Sugar
3 Eggs
1 Tsp Almond extract
3 Cups Flour
2 Tsp Baking Powder
1 cup coconut
1 Cup evaporated Milk ( room temp )
1 Cup Gumdrops or more
Method:
- Cream together butter and sugar.
- Add eggs one at a time mix well until light and fluffy.
- Mix in almond extract.
- In another bowl sift or mix together flour and baking powder.
- Folding dry ingredients with creamed mixture, don't over mix, then slowly add room temp milk to your mixture.
- Fold gumdrops that have been rolled in flour to your mixture, add coconut continue mixing until all combined.
Grease one springform pan or two loaf pans, or bunt.
- Bake in a 400º pre-heated oven for 45 minutes to an hour or less, depending on your oven, always check the middle of your cake first with a toothpick or knife before removing it from the oven, if it comes out dry it's done if wet close door and leave for another five minutes or so then check again. Don't over bake your gumdrop cake ,this will make your cake dry.
- Remove cake from oven let set in cake pan for 5 to 10 minutes before removing it from the pan. You may need to run a knife around the sides to remove from pan if stuck.
