How To make Gumdrop Cake

gumdrops
1/2
cup
raisins

baking powder

baking soda

teaspoon
cinnamon

teaspoon
nutmeg
1/4
teaspoon
salt
1
cup
butter
1
cup
sugar
3
each
eggs
1
cup
applesauce
1
each
lemon rind, grated
Directions:
Preheat the oven to 350F. Cut the gumdrops into small pieces leaving out the black ones. In a small bowl, toss with the raisins and 1/2 c flour. Reserve.
In a separate bowl, combine the baking powder, baking soda, cinnamon, nutmeg, and salt with the remaining flour.
In a large bowl, cream the butter until light and fluffy. Gradually beat in the sugar. Beat in the eggs, one at a time. Stir in the applesauce, flour mixture and lemon rind. Fold in the gumdrop and raisin mixture.
butter a 9 X 5 inch loaf pan and line with buttered wax or parchment paper. Pour in the batter.
Bake for 1 to 1 1/2 hours or till knife inserted comes out clean.
Turn out the cake and let it cool completely. Wrap well with foil and store for 1 to 2 weeks in the refrigerator. Freeze if keeping longer than 2 weeks.
Makes 1 loaf.

I get it - some people don't like Christmas Cake / Fruit Cake. (Mind you we have an excellent Christmas Cake Recipe: ) This is different, this is a Gumdrop Cake... all the colours give it a festive look, the gumdrops make it fun for the kids, and the pineapple keeps the cake moist. This gumdrop cake recipe is also an alcohol free Christmas Cake recipe alternative.
Ingredients:
1 cup butter
3 eggs
3 cups flour
2 tsp baking powder
16 ounce can crushed pineapple
1½ cup sugar
1 tsp vanilla
½ tsp salt
½ lb baking gum drops
16 ounces glacé cherries
Method:
Cream butter and sugar, then cream in eggs one at a time.
Mix in vanilla.
Mix in flour and baking powder.
Mix in pineapple, then gum drops and cherries.
Bake in a 9”x11” greased pan.
Bake at 250ºF for about 4 hours, or 325ºF for about 2 hours.

Old Fashioned Gumdrop Cake
Not everyone likes fruitcake but I have the perfect solution. This cake is different and delicious with an old charm of a fruitcake. After some research I found that this cake dates back to the early 1900's. Eaten with a cup of coffee or some creamy eggnog makes a fabulous Christmas treat. The cake tastes similar to a spice or applesauce cake. The gumdrops give a sweet chewy bite and the crunch of the nuts add a bit of texture. Definitely going to be making this again! I think this cake would also make a great gift!
Gumdrop Cake
Ingredients
2 cups gumdrops
1 cup shortening
1 cup sugar
2 eggs
1 1/2 cups unsweetened applesauce
1 tsp cinnamon
1/2 tsp cloves
1 tsp salt
1 tsp baking soda
1 Tbsp hot water
1 cup light or dark raisins
1 cup chopped nuts
4 cups flour
Instructions
1. Preheat oven to 300 degrees. Dissolve baking soda in 1Tbsp hot water.
2. Cream butter and sugar in a large mixing bowl.
3. Add applesauce, dissolved baking soda and eggs.
4. Add 3 cups flour, cinnamon, cloves, and salt.
5. Mix nuts, raisins, and gumdrops in a separate bowl and sift remaining 1 cup of flour over mixture, stirring making sure everything is coated. Add to creamed mixture.
6. Grease and flour a tube pan or bundt pan. Pour batter into pan and bake 2 hours.
Tip: I baked this cake for 1 hour and 50 minutes, you will want to check after 1 and half hours because some ovens cook differently.
If I make again I think I would increase the applesauce to 2 cups. The cake was a little dry.

Todays recipe is one that my Mother-In-Law makes for Christmas every year for my husband.
GUMDROP CAKE!!!
Ingredients:
1 cup of butter
1 pkg of cream cheese (8oz at room temperature)
1.5 cups of white sugar
4 eggs at room temperature
1 tsp of vanilla
2 cups of flour
1/4 tsp of salt
1.5 tsp of baking powder
2 cups of chopped gumdrops (no spiced ones or black ones)
1/4 to 1/2 of flour in a bowl to toss the chopped gumdrops in
Directions:
1. Pre-heat oven to 350℉
2. Butter and flour your tube pan. Remember to tap out the extra flour in your pan
3. Chop your gumdrops into quarters and toss them in a bowl of flour. Shake off the excess flour and measure out 2 cups of chopped gumdrops and set them aside
4. Cream your butter and cream cheese together until smooth
5. Add your sugar to the butter/cream cheese mixture and mix until fluffy
6. Add 1 egg at a time, mixing and scraping the sides of your bowl between each egg
7. Add your vanilla and give it a quick mix
8. Add your salt and baking powder to your flour and give it a little stir
9. Slowly add your flour mixture to your butter mixture and mix until combined
10. Mix in your floured gumdrops and put the cake batter into your greased pan
11. Put your cake into the oven and bake it for 1 hour. Remember to check it around 45 minutes and adjust if you need to leave it in a little longer or remove it if it's baked
12. Enjoy!!
