24 Days of Cookies: Vlogmas Day 1 ~ Betty Crocker's Gumdrop Sparkle Cookies
Welcome to Vlogmas! Join me each day as I create a different cookie using the Betty Crocker 24 Days of Cookies recipes!
Ingredients:
2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup butter, softened
1 1/2cups granulated sugar
1 egg
1 teaspoon vanilla SAVE $
1 1/2 cups quartered green, red and white spice-flavored gumdrops
2 tablespoons coarse white sparkling sugar
Steps
1. Heat oven to 350°F. In medium bowl, mix flour, baking powder, baking soda and salt; set aside.
2. In large bowl, beat softened butter and granulated sugar with electric mixer on medium speed until fluffy; scrape side of bowl. Beat in egg just until smooth. Beat in vanilla. On low speed, beat flour mixture into sugar mixture until well blended. Stir in 3/4 cup of the quartered gumdrops.
3. hape dough into 60 (1-inch) balls. Place 2 inches apart on ungreased cookie sheets; flatten each ball to 1 1/2-inch circle. On each dough round, sprinkle sparkling sugar and place 3 quartered gumdrops.
4. Bake 9 to 11 minutes or until edges are set and light brown. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes. Store covered in airtight container.

Old Fashioned Gumdrop Cake
Not everyone likes fruitcake but I have the perfect solution. This cake is different and delicious with an old charm of a fruitcake. After some research I found that this cake dates back to the early 1900's. Eaten with a cup of coffee or some creamy eggnog makes a fabulous Christmas treat. The cake tastes similar to a spice or applesauce cake. The gumdrops give a sweet chewy bite and the crunch of the nuts add a bit of texture. Definitely going to be making this again! I think this cake would also make a great gift!
Gumdrop Cake
Ingredients
2 cups gumdrops
1 cup shortening
1 cup sugar
2 eggs
1 1/2 cups unsweetened applesauce
1 tsp cinnamon
1/2 tsp cloves
1 tsp salt
1 tsp baking soda
1 Tbsp hot water
1 cup light or dark raisins
1 cup chopped nuts
4 cups flour
Instructions
1. Preheat oven to 300 degrees. Dissolve baking soda in 1Tbsp hot water.
2. Cream butter and sugar in a large mixing bowl.
3. Add applesauce, dissolved baking soda and eggs.
4. Add 3 cups flour, cinnamon, cloves, and salt.
5. Mix nuts, raisins, and gumdrops in a separate bowl and sift remaining 1 cup of flour over mixture, stirring making sure everything is coated. Add to creamed mixture.
6. Grease and flour a tube pan or bundt pan. Pour batter into pan and bake 2 hours.
Tip: I baked this cake for 1 hour and 50 minutes, you will want to check after 1 and half hours because some ovens cook differently.
If I make again I think I would increase the applesauce to 2 cups. The cake was a little dry.

This is an easy and cute way to decorate a gumdrop cookie!
Gumdrop Coconut Cake - Bonita's Kitchen
Welcome to Bonita's Kitchen!
Today we will be making Gumdrop Coconut Cake, made with baking gumdrops, coconut and so much more. Recipe below!
Ingredients:
1/2 Cup Butter
1/2 Cups Sugar
3 Eggs
1 Tsp Almond extract
3 Cups Flour
2 Tsp Baking Powder
1 cup coconut
1 Cup evaporated Milk ( room temp )
1 Cup Gumdrops or more
Method:
- Cream together butter and sugar.
- Add eggs one at a time mix well until light and fluffy.
- Mix in almond extract.
- In another bowl sift or mix together flour and baking powder.
- Folding dry ingredients with creamed mixture, don't over mix, then slowly add room temp milk to your mixture.
- Fold gumdrops that have been rolled in flour to your mixture, add coconut continue mixing until all combined.
Grease one springform pan or two loaf pans, or bunt.
- Bake in a 400º pre-heated oven for 45 minutes to an hour or less, depending on your oven, always check the middle of your cake first with a toothpick or knife before removing it from the oven, if it comes out dry it's done if wet close door and leave for another five minutes or so then check again. Don't over bake your gumdrop cake ,this will make your cake dry.
- Remove cake from oven let set in cake pan for 5 to 10 minutes before removing it from the pan. You may need to run a knife around the sides to remove from pan if stuck.
