Resep Sambal Teri | Teri Tempe Kering | Sambal Teri Khas Siantar | Enak Tiada Tara...
Bahan-bahan :
300 gr teri jengki/teri kacang
1/2 papan tempe
Bumbu yg dihaluskan :
225 gr atau 20 bh cabe merah, sesuai selera
120 gr bwg merah atau 1 1/2 siung shallot
2 siung bwg putih
2 bh tomat
2 lbr daun jeruk, buang tulangnya
1/2 sdt gula
Minyak utk menumis
Langkah :
Teri dan tempe digoreng kering
Semua bumbu diblender
Panaskan minyak dan tumis bumbu yg sudah dihaluskan sampai kering dan mengeluarkan minyak. Kemudian tambahkan gula.
Apabila sambal sudah kering dan mengeluarkan minyak, matikan api dan masukkan tempe + teri dan aduk2 rata.

Anchovies in Chili Paste Recipe
Ingredients :
300 gr anchovies
1/2 board tempeh
Ground spices:
225 gr or 20 pcs red chili
120 gr or 1 1/2 cloves shallot
2 cloves of Garlic
2 pcs tomatoes
2 lbs lime leaves, remove the bones
1/2 tsp sugar
Vegetables oil
Step:
1. Fry anchovies and tempeh
2. Blend all the spices
3. Heat the oil and saute the blended spices until fragrant then add sugar.
4. Once the spices fragrant, turn the heat off then add the tempe and anchovies. Stir fry them until well mix
5. Spicy anchovies Tempe is ready to be served

Resep Ikan Asin Kukus | Steam Salted Fish Recipe | Super delicious....
Bahan Utama :
200 gr ikan asin, ikan asin apa aja bisa
3 bh terong lalap / terong Thailand
2 bh terong terong ungu kecil atau 1 bh terong ungu besar
Bumbu-bumbu diiris :
10 bh cabe rawit hijau/merah, sesuai selera
5 bh cabe hijau
2 bh cabe merah
4 siung bwg putih
8 siung bwg merah, atau 1 siung shallot atau bawang bombay
1 bh tomat hijau
1 jempol jahe
2 jempol laos
Petai kalau suka (aku skip)
bumbu pelengkap:
4 lbr daun salam
1 sdt gula pasir
1 1/2 sdt kaldu bubuk
3-4 sdm minyak goreng
4 sdm air putih
garam sesuai selera
Langkah2 :
Rendam ikan asin minimal 3 jam, dan ganti air setiap 1 jam (atau sesering mungkin), tiriskan dan masukkan ke dalam wadah yg
besar (atau lgsg ke wadah yg nantinya dipakai utk mengukus). Kemudian campurkan semua bumbu2 yg sdh diris dan bahan2 pelengkap
ke dalam wadah yg berisi ikan asin dan aduk hingga tercampur rata. Kukus ikan dikukusan yg airnya sdh terlebih dahulu dididihkan
selama 30 mnt(atau sampai terong matang). Setelah 30 mnt matikan api kompor, tambahkan irisan daun bawang dan biarkan ikan selama
10 mnt didalam kukusan dgn keadaan panci tertutup. 10 mnt kemudian ikan kukus siap utk dihidangkan.

Ingredients :
200 gr salted fish (you can buy them in Asian supermarket)
3 thai eggplants or 1-2 purple eggplants or to taste
Spices in slices :
10 cayenne pepper, to taste (just skip them if you dont like spicy)
5 green chilli
2 red chilli
4 garlics
1 shallot or onion
1 green tomato
1 thumb ginger
2 thumbs galangal
Seasonings :
4 bay leaves
1 tsp sugar
1 1/2 tsp chicken broth powder, to taste
3 tbsp vegetable oil
4 tbsp water
salt to taste
Soak the salted fish for at least 3 hours and change the water every 1 hour (or as often as possible), drain them. Add the salted fish in a large container
(or into the container that will be used for steaming). Add all the spices and the seasoings into the container containing the salted fish and stir them wewl.
bring the steamed water to a boil and steam the salted fish and the ingredients for 30 min (or until the eggplants are cooked). After 30 minutes, turn the heat off,
add the sliced spring onion and let them sit for another 10 minutes in the steamer. 10 minutes later Steam Salted Fish is ready to be served.

Bahan-bahan :
1 kg daging babi samcan
2 jempol jari jahe, iris
Garam secukupnya
Air utk merebus
Minyak utk menggoreng
Bumbu-bumbu :
220 gr atau 50 bh caba hijau
3 siung bawang putih
1/2 jempol jahe
120 gr bwg merah atau 1 bombay
5 lbr daun jeruk
1/4 sdt ketumbar bubuk
1 sdt kaldu
2 sdt garam
air dari 1/2 jeruk nipis, siramkan ke cabe hijau yg sudah ditumbuk kasar atau 1 bh asam kandis

Green Chilli Fried Pork
1 kg pork belly
2 thumb ginger, slice
Salt to taste
Water to boil
Oil to fry
Seasonings:
220 gr or 50 pcs of green chilies
3 cloves of garlic
120 gr shallots or 1 onion
1/2 thumb ginger
5 pieces of lime leaves, discard the middle bone
1/4 tsp coriander powder
1 tsp chicken stock powder
2 teaspoons salt
juice of 1/2 lime, pour it onto coarsely grind green chilies
Step 1 :
Bring the water, the sliced ginger and salt to boiled to remove the impurities of the pork . Add the belly pork
and boil for about 40 minutes. After 40 minutes, remove the pork, then tubbing the pork with a fork and pat the skin dry
when the juices begin to surface. Pour the salt and give massage and let it rest for 1 hour or preferably rest overnight
in the refrigerator. After one hour, time to fry the pork.
Heat the oil and fried the pork (skin side) until golden brown and crispy and turn over then fry briefly, remove the pork
from the oil and drain the pork. Cut to taste.
Step 2
Grind the cilies, shallots/onion, garlic, ginger, lime leaves coarsely (i use pestle/mortar), you can use blender if you want.
Saute the spices with a little cooking/vegetable oil (inc. the corriander, chicken stock powder and salt) until fragrant,
then add the fried pork and saute them briefly and Green Chilli Fried Pork is ready to be served.

1 bks Kare Pasta instant ssebagai bumbu basis (kl boleh yg malaysian curry paste)
400 gr kentang, aku pakai kentang rebus siap jadi (yg sudah direbus setengah matang)

500 - 600 ltr air
Minyak sayur utk menumis
Bumbu yg dihaluskan :
85 gr atau 5 bh cabe merah, sesuai selera
15o gr bwg merah
3 siung bwg putih
3 butir kemiri
30 gr atau 1 jempol lengkuas
Jahe 15 gr atau 1/2 jempol
1 btg serai
3/4 sdm ketumbar bubuk
Bumbu pelengkap :
1 bks Kari Pasta instant (aku pakai malaysian curry paste)
1 jempol laos
1 btg serai
3 lbr dau salam
5 bh kapulaga
2 sdt garam
1 sdt kaldu sapi

Beef Curry Recipe
Ingredients :
1 kg beef
400 gr potatoes, I use pre-cooked potatoes
500 ml instant coconut milk
500 - 600 ml of water
Cooking oil
Ground spices:
85 gr or 5 red chilies, according to taste
15o gr red onion/shallots
3 cloves of garlic
3 candlenuts
30 gr or 1 thumb of galangal
Ginger 15 gr or 1/2 thumb
1 stalk lemon grass
3/4 tbsp coriander powder
Seasonings:
1 pack instant curry paste as a basic ingredients (i use Malaysian Curry Instant Paste)
1 thumb galangal. burised
1 stalk lemongrass, bruised
3 bay leaves
5 cardamom
2 tsp salt
1 tsp beef broth
1 tsp sugar
Steps :
- Cut the beef thinly
- Bring the water to boiled and cook the beef for about 15 minutes to remove the impurities of the beef
- Blend all the spices
- Saute the spices (except for the beef broth, salt and sugar) until fragrant then add the beef. Stir them well and cover with the lid.
cook them for 15 minutes with middle heat (check and stir fry the beef occasionally).
- Then add beef broth, salt and sugar. Stir fry the beef curry then again cover with the lid. Cook them for about 80 to 90 minutes or until
the beef tender.
- Once is the beef tender add the coconut milk and cooked them for another 10 minutes or until the potatoes soft enough.
- Beef Curry is ready to be served
