How To make Grilled Mussels with Hot Fish Sauce
2 lb Fresh mussels
1 Lemon Grind to paste
-or 1t powder 3 tb Fish sauce Nuc-Mam
Vietnamese (or Thai) 1 ts Sugar
2 Dried hot red pepper
2 Cloves garlic
2 tb Water
1. Clean and scrub the mussels as shown in class.
2. While mussels are draining, prepare sauce: Blend garlic and red peppers
into a paste. Add juice of 1 lemon, 3 tb fish sauce, 1 tb sugar, and finally, 2 tb water.
3. Preheat broiler.
4. Place clean, dry mussels in a single layer on a baking sheet.
5. Broil mussels just until they are all open and aromatic.
6. Remove from broiler and serve with rice. Dip mussels into sauce to eat.

STIR FRIED MUSSELS WITH ROASTED CHILI PASTE AND THAI BASIL
INGREDIENTS:
2 lbs Cooked mussels
12 fresh thai chilies, or according to taste
4 Cloves garlic
1 small shallot, sliced
1/4 cup Water
2 tbsp veg. oil
A handful of thai sweet basil
SEASONING INGREDIENTS :
1-1/2 tbsp Oyster sauce
1 tbsp Seasoning soy sauce
1 tbsp Roasted chili paste (Prik pao)
1 tbsp Fish sauce
1 tsp MSG
Serve with Jasmine rice.

Steamed Mussels with Thai sauce
Chilean Mussels - 300gms, local mussels can be used as well
Ginger, slices for steaming
Leeks, green parts for steaming
Sauce:
Red Chilies, chopped- 2pcs, more if you can take the heat
Garlic, minced - 1tsp
Thai Fish sauce - 3Tbsp
Coriander leaves - 1Tbsp
Brown Sugar - 2Tbsp (if you can find Palm Sugar, better)
Lime Juice - 2Tbsp
Procedure:
Pre-heat Panasonic Rice Cooker, add water and set up steaming rack. Let it boil.Once pot is steaming, remove cover and add lay ginger and leeks in the steaming rack followed by the Mussels. Steam for 5-6minutes
While Mussels are steaming, get a mixing bowl and mix all remaining ingredients together for the sauce, make sure sugar is dissolved and set aside. Check on the Mussels once properly cooked, plate it up, garnish with chopped leeks and serve sauce on the side. Enjoy!
(For local Mussels, any mussels that don’t open up, throw it out)

Mussels with Sweet and Sour Chilli Sauce
Ingredients
- 1kg of mussels
- 4 Tbs vegetable oil
- 2 Tbs crushed garlic
- 1 Tbs diced shallots
- 1 Tbs chopped Thai chilli
- 2 1/2 Tbs sliced palm sugar
- 1 Tbs fish sauce
- 1/2 cup Mussel broth
- 4 Tbs vinegar
- 2 Tbs chopped coriander
Method
1. Wash the mussels
2. Boil mussels in pot for 5 minutes without any water
3. When mussels are open, remove immediately and save mussel broth for later
4. Strain the mussel broth to remove excess shells
5. Split the mussels in half and place on to a plate
6. Prepare Sweet and Sour Chilli Sauce
7. Dress the mussels with the Sweet and Sour Chilli Sauce
8. Garnish with chopped coriander
9. Serve immediately
Sweet and Sour Chilli Sauce
1. Pour oil into frying pan and heat up
2. When oil is hot add crushed garlic
3. Stir on a medium heat until golden brown
4. Add diced shallots
5. Add Thai chilli
6. Stir and add palm sugar
7. Stir until palm sugar dissolves
8. Add fish sauce and bring to a boil
9. Add mussel broth
10. Add vinegar

Spicy Chili Mussels
I remember that when I was a kid, I really hated to eat mussels, but my lovely sister helped me to discover them and made me like it. When I got married, my husband didn't like mussels also, but look at him now. And I am proud of my daughter, because she started eating mussels for the first time today! Its not about the mussels that makes you want to eating them, but its how you prepare and serve them that make someone wanting to try it.
This recipe is dedicated to my specials friends, Elva, Windi and Indri. Cheers to our last sunday afternoon! ;)
