How To make Grilled Mussels with Hot Fish Sauce
2 lb Fresh mussels
1 Lemon Grind to paste
-or 1t powder 3 tb Fish sauce Nuc-Mam
Vietnamese (or Thai) 1 ts Sugar
2 Dried hot red pepper
2 Cloves garlic
2 tb Water
1. Clean and scrub the mussels as shown in class.
2. While mussels are draining, prepare sauce: Blend garlic and red peppers
into a paste. Add juice of 1 lemon, 3 tb fish sauce, 1 tb sugar, and finally, 2 tb water.
3. Preheat broiler.
4. Place clean, dry mussels in a single layer on a baking sheet.
5. Broil mussels just until they are all open and aromatic.
6. Remove from broiler and serve with rice. Dip mussels into sauce to eat.

1.2 kg mussels
salt for boil
5 cloves garlic, minced
1 tbsp. gochujang chilli paste
2-3 tbsp white wine
salt to taste
black pepper
half lemon juice
red chilli optional
chopped parsley
chopped spring onion
30 grams butter
2 tbsp olive oil.

INGREDIENTS
1/2 box greenshell mussels
1 clove garlic, thinly sliced
1 small shallot, sliced
2 stalks green onions, sliced
1 jalepeno, sliced
thai chilies (optional)
15-20 thai basil leaves
6-8 cherry tomatoes, halved
SAUCE INGREDIENTS (you can double the sauce if you like it saucier!)
2 tablespoons oyster sauce
splash of fish or soy sauce
1 tablespoon sriracha
1 teaspoon sugar
1-2 tablespoons water

This recipe is yummy, but I think prefer the more simple version with scallion oil on the mussels and then dipping the cooked mussels into a lime, salt, and pepper sauce to eat! It’s how my uncle (@ngocdung07’s dad) made it growing up, so maybe I’m just used to it? ????
I recommend preparing it both ways to see what you like best!!

-1/2 c water

-1 tbsp ginger, minced
-1 tsp garlic, minced
-sriracha (optional)
-to serve: lime juice, peanuts, fried shallots
