How To make Grilled Fish Sandwiches
4 fresh or frozen fish fillets, -- (about 4oz.)
1 tablespoon lemon or lime juice
1 teaspoon lemon-pepper seasoning, Jamaican Jerk
seasoning or :
Cajun seasoning 1/2 cup mayonnaise or salad dressing
4 teaspoons Dijon-style mustard
1 teaspoon to 3 teaspoons honey
4 slices Onion and Olive Focaccia (see recipe) or 4
purchased focaccia:
or hamburger buns or kaiser rolls, :
split and toasted watercress or lettuce leaves, optional roasted sweet red pepper strips or fresh :
tomato slices :
optional
Thaw fish, if frozen. Brush fish fillets with lemon or lime juice. Rub desired seasoning evenly onto all sides of fish. Place the seasoned fish fillets in a well-greased wire grill basket. Grill in the wire basket on an uncovered grill directly over medium coals for 4 to 6 minutes for each 1/2 inch thickness f fish or just till fish begins to flake easily when tested with a fork. Meanwhile, for spread, in a small mixing bowl stir together mayonnaise or salad dressing, mustard, and honey to taste. To serve, spread the dressing mixture onto the cut side of focaccia slices or buns with watercress or lettuce, fish, additional dressing mixture, roasted red pepper or fresh tomato, and top slices or halves of bread. Makes 4 servings.

2 tbsp. Oil
4 tbsp. melted unsalted Butter
1 Garlic Clove
10 oz. French Bread, halved
½ cup Mayonnaise
½ cup shredded Lettuce
12 sliced Dill Pickles
2 Roma Tomatoes, sliced ½ inch thick

Grilled Cheese & Fish Finger Sandwich | Sea Harvest Recipes
Your family’s favourite grilled cheese sarmie just got a golden crispy twist! Learn how to make a Fish Finger Grilled Cheese Sandwich in our latest #FishnTips video.
Serves 4
Prep time: 20 minutes
Cook time: 15-20 minutes
16 Sea Harvest Fish Fingers
8 slices of white bread
¼ C (60 ml) good quality mayonnaise
150 g grated mozzarella
150 g grated mature cheddar
a small handful of chopped chives
sea salt and freshly ground pepper
butter for spreading
Preheat the oven to 200 ºC.
Lay Sea Harvest Fish Fingers on a baking tray; place into the oven and bake until golden brown.
Remove from the oven and allow the fish fingers to cool slightly.
Lay 4 slices of bread out and butter the insides.
Spread a layer of mayonnaise on one side and sprinkle it with chopped chives.
Add a layer of mozzarella on top of the mayonnaise and then add the baked fish fingers. Top with the mature cheddar and season to taste.
Top the sandwiches with the second slice of bread and and butter the tops.
Set a large frying pan over medium heat. Add a knob of butter to the pan and allow it to melt.
Carefully place a sandwich unbuttered side down into the pan (you can do two at a time in the pan if you have space).
The trick is to cook them slowly to allow the bread to crisp up and the cheese to melt on the inside at a steady pace. If your pan is too hot the bread will be done before the heat has melted the cheese.
Carefully flip the sandwiches using a spatula and crisp up the other side. Repeat with the other two sandwiches. Remove from the stove, cut the sarmies in half and serve. Tip: You can keep sandwiches warm in the heated oven until ready to serve. Turn down to about 50 ºC.
