How To make Grilled Fish w/Pineapple Cilantro Sauce
1 md Pineapple (about 2 lb)
-peeled, cored and -cut into 1" chuncks 3/4 c Unsweetened Pinapple Juice
2 tb Lime Juice
2 cl Garlic, Minced
1/2 ts To 1 ts Jalapeno Pepper
2 tb Minced Cilantro
1 tb Cornstarch
2 tb Cold water
2 tb To 3 Tb NutraSweet
-(r) Spoonfull (tm) Salt Pepper 6 oz 4 oz Halibut, Haddock
-or Salmon steks or fillets. -Grilled Heat Pineapple, Juices, Garlic and Jalapeno pepper to boiling in a medium saucepan; Reduce heat and simmer, uncovered about 5 minutes. Stir in cilantro; Heat to boiling. Mix Cornstarch and cold water, Stir into boiling mixture. Boil, stiring constantly, until thickened. Remove from heat; Cool 2-3 minutes. Stir in NutraSweet (r) Spoonfull (tm); Season to taste with salt and pepper. Serve warm over Fish or Pork. Best Fish Tacos EVER
Fish tacos are on the menu. Went with Mahi Mahi from my local Mariano's. #fishtacos #fish #taco

Fish seasoning mix:⠀
- 1 tsp each: chili powder, cumin, coriander, garlic powder and salt⠀
⠀
Season the fish on all sides and grill over direct heat at 400-450 degrees. Took about 8-10 minutes, until the fish reaches 140-145 internal. Rest and shred it. ⠀

Top the tacos with a red cabbage slaw and cilantro lime crema. And they were delicious! Not fishy, good spice and nice crunch from the slaw. ⠀

For the cabbage slaw, mix the following:⠀
⠀
- 1 cup of thinly sliced red cabbage⠀
- 1 tsp salt⠀
- juice from 2 limes⠀
- 1/2 thinly sliced red onion⠀
- 1 chopped jalapeno for some heat⠀
- 1 tbsp olive oil. ⠀
- handful of chopped cilantro. ⠀
⠀
For the crema, mix sour cream, lime juice and cilantro.

PG1000- Grilled Tilapia with Pineapple Salsa
Cookshack, Inc. President & CEO, Stuart Powell uses the Fast Eddy's PG1000 pellet grill to smoke tilapia. The grilled tilapia is cooked on the indirect side along with the sweet potatoes. Then the tilapia is served over a sweet potato mash and topped with a zesty pineapple salsa.
Pineapple & Habanero Fish Tacos Recipe

Recipe:
6 oz White fish
2 tsp Canola or corn oil
1/2 c Thin sliced red cabbage
1/4 c Chopped cilantro
1/2 Small avocado, sliced
2 oz Bravado Spice Pineapple & Habanero
1 Lime, quartered
Salt & Pepper to taste
Tortillas, warmed
1.) Clean and chop/slice your veggies
2.) Remove any skin from your fish.
3.) Oil and heat your pan (preferably a cast iron skillet) to medium high heat.
4.) Place the fish on hot skillet, and top with 1 oz Bravado Spice Pineapple & Habanero Hot Sauce. You may need to cover the skillet. Cook for approximately 60-90 seconds.
5.) Flip the fish and cook for another 30-45 seconds. Top with the rest of the Bravado Spice Pineapple & Habanero Hot Sauce.
6.) Remove from heat and served immediately in your warmed tortillas and top with cabbage, avocado, cilantro, and squeeze of lime.
