How to Make Simple Old Fashioned GINGERBREAD Hack from a Box Mix & Homemade LEMON GLAZE

This hack will give you that desired old fashioned gingerbread in a jiffy! Only a few ingredients and your family can enjoy a homemade gingerbread!
For the cake/ Bread

1 16oz pk of Ginger bread mix
1 1/4 cups buttermilk or whole milk
1/2 Tbsp ground ginger
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
Spread 1tbsp of melted butter over the cake while it’s still hot!
For the lemon glaze

2 cups confectioner’s sugar
3 Tbsp freshly squeezed lemon juice
Sift the cake mix first, combine all the Ingredients and beat on low- medium speed with a hand mixer or a whisk. Pour into a greased 9x5 baking pan and bake immediately at 350F for 35-40 minutes. A toothpick inserted in the middle should come out dry and clean. Pour the melted butter over the cake while it’s still hot.
Allow the cake to cool off completely before pouring lemon glaze over it. Let the glaze set and harden before cutting and serving! Enjoy with vanilla ice cream or as is!
You can add 1/4 cup of vegetable oil plus a Tbsp of lemon zest for additional lift in flavor and texture.

1) «wet»
1/2 cup butter
1/2 cup powdered sugar
1 egg
1/2 cup honey
1/3 cup molasses
1 tsp cognac
2) «dry»
2 cups flour
1/2 tsp salt
1 tsp cinnamon
1 tsp ginger
1/2 tsp clove
1/2 tsp baking powder
3) add 1 cup _hot_ coffee and 1 tsp cognac.

Ingredients
* 1 1/4 cup unsalted butter at room temperature
* 2 cups white sugar
* 2 eggs
* 1/2 cup molasses
* 4 cups all purpose flour
* 1/2 tsp salt
* 4 tsp baking soda
* 2 tsp ground cinnamon
* 1 tsp grated fresh ginger or powdered ginger
* 1/2 tsp ground cloves
* 1/3 cup white sugar for rolling
Instructions
* Add the butter to the bowl of your stand mixer fitted with the paddle attachment. Cream the butter on medium high speed until it is soft and creamy and the colour begins to turn pale (use a hand mixer if you wish).
* Add the sugar and beat on medium high speed for 2 minutes, scraping down the sides of the bowl a few times.
* Beat in the eggs on medium high speed one at a time, scraping down the bowl after each addition.
* Beat in the molasses and scrape down the bowl to ensure everything is evenly combined.
* In a separate bowl, combine the flour, baking soda, grated ginger, cinnamon, cloves and salt. Whisk these ingredients together to they're combined and dump the mixture into the bowl of the stand mixer with the butter mixture.
* Combine the butter mixture and the dry ingredients on low speed just until no streaks of flour remain. You'll have to scrape down the sides of the bowl a few times to make sure everything is incorporated.
* Cover the dough with plastic wrap and chill in the fridge for one hour.
* After one hour has passed, preheat your oven to 350 degrees Fahrenheit.
* Remove the dough from the fridge and shape it into about 36 balls with your hands, rolling each ball of dough in the white sugar and placing it on a baking sheet prepared with some parchment paper. Remember to space the cookies out appropriately...this recipe makes about 3 dozen cookies so you'll likely need to bake 3 or more sheets of cookies.
* Bake each sheet of cookies for 10-11 minutes at 350 degrees Fahrenheit.
* When you remove the baking sheet from the oven, let the cookies cool on the baking sheet until they've cooled almost completely. This will help them achieve that soft and chewy texture as they continue to bake on the inside even after they've been removed from the oven.

A richly spiced Gingerbread with sweet Caramelized Pears.
Baked in a cast iron skillet, or other oven-going skillet. Can make just the Gingerbread in a 9 inch Round baking pan.
INGREDIENTS
4 Medium Fresh Pears, peeled, halved & cored (can use quartered slices, if preferred)
1/4 Cup Butter
1/2 Cup packed Brown Sugar
1/4 Cup chopped Crystallized Ginger
2 Cups AP Flour
1 Tsp Baking Powder
1 Tsp Baking Soda
1/4 Tsp Salt
2 Tsp Ground Ginger
3/4 Tsp Ground Cinnamon
3/4 Tsp Ground Cloves
1/4 Tsp Ground Allspice
2/3 Cup Butter, softened
1/2 Cup packed Brown Sugar
2 Eggs
1/2 Cup Full-flavored Molasses
2 TBSP grated fresh Ginger
3/4 Cup Buttermilk
Garnish with additional chopped crystallized Ginger (optional)
1. Preheat oven to 350 F. In a 10-inch cast-iron skillet, melt 1/4 cup butter over medium heat.
Stir in 1/2 cup brown sugar, stirring until sugar is no longer grainy. Remove from heat. Arrange the pear halves, cut side up, in the skillet. Sprinkle 1/4 cup chopped crystallized ginger over the pears.
Set aside.
2. In a medium bowl, combine flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, allspice. Set aside.
3. In a large bowl, beat 2/3 cup butter with electric mixer on medium to high speed for 30 seconds. Beat in 1/2 cup brown sugar until well combined. Add eggs, 1 at a time, beating after each addition.
Beat in molasses and fresh ginger. Alternately add flour mixture and buttermilk to batter, beating on low speed after each addition just until combined. Spread batter over pears.
4. Bake about 40 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in the pan on wire rack for 5 minutes. Loosen cake from pan; invert onto a large serving plate.
5. Serve warm or at room temperature. If desired, top with additional crystallized ginger.

RECIPE BELOW
Old Fashioned Gingerbread Cake
~INGREDIENTS~
-1/2 c. Butter
-3/4 c. Brown Sugar
-1/2 c. Molasses
-2/3 c. Hot Water
-2 Eggs Beaten
-2 1/4 c. All Purpose Flour
-1/2 t. Baking Soda
-1 t. Baking Powder
-1/4 t. Salt
-1/4 t. Allspice
-1/2 t. Ginger
-1 t. Cinnamon
~DIRECTIONS~
-Preheat oven to 350 F and grease and flour a 9 inch cake pan. Set aside.
-In a mixing bowl, cream butter, then add brown sugar and mix. Add Molasses and mix, then add the hot water and fully mix.
-In a separate bowl add the dry ingredients. Flour, spices, baking soda, baking powder, salt. Whisk together to combine.
-When dry ingredients are combined, add to the wet mixture in 3 equal parts mixing thoroughly each time.
-Next add the beaten eggs and mix.
-Pour the Old Fashioned GingerBread Cake Batter into the cake pan and bake for 45-55 minutes of until the tooth pick comes out clean!
BONUS RECIPE!
CINNAMON WHIPPED CREAM!
~INGREDIENTS~
-1 c. Whipping Cream
-3/4 t. Cinnamon
-2 T. Powdered Sugar
~DIRECTIONS~
-In a mixer add all of the ingredients.
-Whisk on High for 3 minutes or until you reach the fluffy whipped cream consistency!
