How To make Fried Fish Batter
1 ts Salt
1/2 ts Black pepper
1 c Cornmeal
1 tb Sherry or brandy (optional)
1 Jar prepared mustard
Fish (Steaks, fillets or whole) Oil for frying. Heat oil until it pops when sprinkled with a drop of water. Pat fish dry, then brush with mustard, (mixed with sherry or brandy if desired). Sift cornmeal, salt and pepper into bag. Add 2 or 3 steaks or fillets, or 1 whole fish; close and shake. Drop fish carefully into hot oil; fry until lightly browned. Drain well on paper. Keep fish warm and crisp in a closed paper sack. Try fresh potatoes fried with the same batter. Tastes great!!

Ingredients
For the batter:
150g All purpose flour
75ml Tapioca flour (can substitute cornflour)
7.5ml Baking powder
235ml Water
2.5ml Salt
30ml Oil
Other:
2 x 250g White fish
Lemon wedges to serve
Instructions
Sift the flours and the baking powder into a large mixing bowl.
Add the water and mix this to a smooth batter. Allow this to stand for 30 minutes.
While the batter stands, pat the fish dry with kitchen paper, then season liberally with lemon pepper, and season to taste with salt.
Add the salt and oil to the batter and whisk this in until totally combined.
Half-fill your pan with oil and heat this to 180c or 350f.
Drag the fish through the batter to get a good coating all over, then carefully lower the fish into the oil.
Fry the fish for 3 minutes per side. Remove the fish and drain any excess oil on kitchen paper.
Serve immediately with lemon wedges and the accompaniments of your choice.

EASY BATTERED FISH RECIPE SECRET BEHIND GETTING PERFECTLY CRISPY BATTER COD WITH SECRET SPICE
In this video, we show you an Easy Battered Fish Recipe and share the secret behind getting a perfectly crispy batter for your cod. We have used Cod Fillets in this recipe and we also share the secret spice mix that goes into the fish batter, which gives you the wonderful subtly spiced fried fish. Fish and Chips is the national dish of the UK where I live, and since our school days we have had Battered Fish on most Fridays. My family and I absolutely love fried battered fish (especially when it's cod) and it is also the meal of choice on each visit to the seaside!
*Please note some corrections to the recipe below (marked with *)
To make the Easy Battered Fish Recipe batter, you will need:
1 cup all-purpose flour
1/2 cup cornflour (also known as corn starch)
salt to taste
1/2 tsp red chili powder
1 tsp paprika
1/4 tsp black pepper
1/2 tsp garlic powder
1/4 tsp baking soda
1 tsp baking powder
enough water to form a fairly thick batter
*1/2 tbs vinegar
For the Fried Fish flour mixture:
1/2 cup all-purpose flour
salt to taste
*1 tbs cornflour (also known as corn starch)
We used 4 x Frozen Cod fillets, but you can use haddock too.
Oil for frying
The secret spice mix that goes into the batter gives a subtle wonderful seasoning to the fried fish. Some battered fish recipes use beer to create the bubbles, however we have shown a no beer version (alcohol-free) of getting the same bubbles to appear in the batter. The double-frying method also ensures the most wonderfully crispy Cod Fish for you to enjoy! We served our crispy battered codfish fillets with hand-cut chips and peas, with a selection of sauces.
The fish batter was extremely crispy and had the most wonderful seasoning.
