This recipe is an interpretation on the classic Flounder Meunière, which is made with a delicate white meat fish, lots of browned butter, fresh lemon and parsley. It's very simple to prepare - don't let the fancy name fool you!
I added ¼ teaspoon smoked paprika and I skipped the flour to keep the dish super delicate and light, but if you’d like you can lightly dredge the filets in a little all purpose flour before pouring the sauce over and baking.
Also classic Meuniere is pan-fried… I like to bake tender white meat fish, so it doesn’t fall apart in the pan.
Baked Flounder Meuniere
6 flounder filets (you can substitute cod or sole, if you prefer)
Kosher salt, to taste
Freshly ground black pepper, to taste
4 tablespoons unsalted butter
Zest of 1 lemon
3 tablespoons lemon juice
3 cloves garlic, finely minced
1/4 teaspoon smoked pepper
4 tablespoons chopped Italian parsley
Extra lemon slices, for garnish
1. Preheat your broiler to high. Season the flounder on both sides with salt and pepper. Place the filets on a parchment lined baking tray, be certain your rack is not too close to the heat otherwise your parchment may burn. You can use aluminum foil if you don’t have parchment.
2. In a medium saucepan, combine the butter, lemon zest and juice, garlic, smoked paprika and chopped parsley, heat gently until the butter is melted and just starts bubbling.
3. Use a spoon to drizzle the butter sauce on top of the prepared filets. Top each filet with a thin slice of lemon.
4. Place in the oven for 8-10 minutes depending on the thickness of your filet.
5. Remove from the oven, give an extra sprinkling of fresh herbs and serve, it could not be any easier. This one’s goes in the file.

Sole meuniere is a classic French seafood dish. Learn to cook sole meuniere with this step-by-step video demonstration.
Ingredients
4 Baby soles, or 2 medium soles
All-purpose flour for dusting
200ml Clarified butter
2 Tbs Fresh lemon juice
4 Tbs Roughly chopped parsley
Season to taste
Instructions
Pat the soles dry with kitchen towel
Drench the soles in the flour to get a very light coating
Chop the parsley roughly
Squeeze the lemon juice and add it to the parsley
Heat half of the butter in a pan over medium-high heat and add the soles to the pan
Fry the soles for 4 minutes per side, then transfer them to a heat-proof platter
Drizzle the lemon parsley mix over the soles
Add the remain butter to the butter in the pan and heat over medium-high heat until it starts to smoke and turns golden
Remove the pan from the heat and carefully pour the butter over the sole
Beware that the hot butter will react quite violently when it comes into contact with the lemon juice and parsely - stand back when you do this
Serve immediately
