How To make Broiled Flounder
4 x Double Filets of Flounder
2 x Eggs, separated
1 pn Salt, Pepper, Dry Mustard
1 c Peanut Oil
4 tb Pickle Relish
1 tb Parsley, chopped
1 tb Lemon Juice
1 d Tobasco
1) Place the egg yolks in a blender, food processor or
deep bowl. 2) Blend in the salt, pepper and mustard. If blending
by hand, use a small whisk. 3) If using the machine, pour the oil through the
funnel in a thin, steady stream with the machine running. If mixing by hand, add oil a few drops at a time, beating well in between each addition. 4) When half the oil has been added, the rest may be
added in a thin steady stream while beating constantly with a small whisk. 5) Mix in the relish, parsley, lemon juice and
tobasco. Beat the egg whites until stiff but not dry and fold into the mayonnaise created through step 4. 6) Broil the fish about 2 inches from the heat source
for about 6-10 minutes, depending on the thickness of the filets. 7) Spread the sauce over each filet and broil for 3-5

Flounder:
6 Pieces of Flounder
Half a Lemon + ¼ Tsp Lemon Zest
1 Tbsp Basil
1 + ½ Tbsp Parsley
1 Tbsp Minced Garlic
½ Tbsp Salt
½ Tsp pepper
¼ Tsp Smoked Paprika
1 Tsp Honey
- After seasoning your Flounder let it marinate in the fridge for an hour and a half. Remember to salt your food according to your own taste!
- Place the Flounder on a well-oiled baking dish (I used about 6 Tablespoons of Sesame Oil)
- Bake the flounder placed on the middle oven rack for 12 minutes. °425 for the first 8 minutes and °550 for the last 4 minutes.

Butter Sauce:
3 Tbsp Butter
1 Tsp Rosemary
Pinch of salt (to taste)
2/3 Tsp Garlic
- Once the butter was melted and the other ingredients were added, I turned the stove off and let the mixture sit with the lid on until my fish was finished. Overall, it sat for 1 ½- 2 hours. I made sure the mixture stayed warm throughout the 2 hours by intermittently turning the stove on to a low flame. The touch of the pan should feel very warm so you know the butter is also warm.

Oven Broiled Fish - quick, simple, delicious!!
This fish recipe comes together, from start to finish, in 15 minutes!! So quick and simple, with basic ingredients, but producing delicious results - hope you give it a try :)
Ivo’s “Fish Broil” – fish cooked in your oven
Ingredients
• 2 – 4 fish fillets
• ½ cup breadcrumbs
• ½ tsp old bay seasoning (or substitute with lemon pepper)
• ½ tsp paprika and a bit more for seasoning
• ½ tsp salt (or salt to taste)
• ½ tsp dried oregano (this is optional)
• Butter – about ¼ cup (substitute margarine)
Process
• Mix all spices with the breadcrumbs (in a bag or a bowl or plate). Add the fish fillets and coat the fillets with your breadcrumb mixture.
• Take a broiler pan, line it with parchment paper (not essential but preferred), place slivers of butter on the parchment paper, then place fish fillets on top of the butter (each fillet should have butter below it)
• Dust the top of the fillets with paprika, then add slivers of butter on top of the fillets
• Place oven rack second on the 2nd rung from the top and place broiler pan with fish on top
• Set oven to “broil” and cook until the fish fillets start to split and turn golden brown, typically anywhere from 7/8 minutes to 12 minutes, depending on thickness of fillets and your oven
