WHITE SAUCE PASTA
Preparation time 10 minutes
Cooking time 10-15 minutes
Serve 2-4
Ingredients
For White Sauce
100 gm Butter, cut into cubed, मक्खन
100 gm Refined flour, मैदा
1 ltr Milk, दूध
1 tbsp Butter, cubed, मक्खन
For Boiling Pasta
Water as required, पानी
1 tsp Oil, तेल
Salt to taste, नमक स्वाद अनुसार
2 cups Penne Pasta, पेने पास्ता
1 large Carrot, cut into dice, गाजर
12-15 no. Button Mushrooms, cut into half, मशरूम
2 tsp Oil (for coating), तेल
For White Sauce Paste
½ tbsp Oil, तेल
2-3 Garlic cloves, chopped, लहसुन
¼ cup Sweet corn kernels, blanched, भुट्टे के दाने
Boiled Pasta & Vegetables, उबले हुए पास्ता और सब्जियां
⅓ cup Remaining Pasta Water, पास्ता का पानी
1 cup Prepared White Sauce, वाइट सॉस
¼ cup Processed cheese, grated, चीज
2 Green chillies (less spicy & chopped) हरी मिर्च
1 tsp Coriander leaves, chopped, धनिया पत्ती
1 ½ tsp Extra virgin olive oil, जैतून का तेल
For Garlic Bread
1 ½ tsp Oil, तेल
2-3 Garlic cloves, crushed, लहसुन
Baguette, Slices, बगेत ब्रेड
For Garnish
Basil leaves, बसिल की पत्तियां
Process
For White Sauce
In a sauce pot, add butter, once it melts, add refined flour, stir until creamy/ lump free and cook it for a minute.
Slowly & gradually add milk, whisk continuously until it's smooth & creamy. Cook it for 2-3 minutes or until slightly thicken.
Transfer it to a bowl, add butter for coating to avoid layering.
Keep it aside for further use.
For Boiling Pasta
In a pot, add water, once it’s boiling, add oil, salt to taste, penne pasta, carrots, mushroom and cook it for 8-10 minutes or until at al dante stage. or until al dente
Strain the excess water and coat the pasta with oil to avoid sticking to each other.
Keep it aside for further use.
For White Sauce Paste
In a pan, add oil, once it's hot, add garlic, salt to taste, corn kernels and toss it for a minute.
Add boiled pasta & vegetables, remaining pasta water and saute.
Add white sauce, processed cheese and cook until the cheese melts.
Add green chilies, coriander leaves, olive oil and mix it well.
Transfer it to a serving dish, garnish it with basil leaves.
Serve with garlic bread.
For Garlic Bread
In a pan, add oil, once it's hot, add garlic and cook it until golden brown in color.
Add bread slices and toast it until golden in color.
Keep it aside for further use.

Pasta With Mint Sauce
Servings - 2 - 3
INGREDIENTS
(Mint Sauce)
Mint leaves - 15 grams
Coriander - 20 grams
Green chili - 2
Ginger - 1 1/2 teaspoons
Salt - 1/2 teaspoon
Cumin powder - 1/2 teaspoon
Lemon juice - 1 tablespoon
Water - 2 tablespoons
(For Spinach Puree)
Water - 1.5 litres
Spinach - 110 grams
(For Pasta)
Water - 1.5 litres
Penne pasta - 250 grams
Salt - 1 teaspoon
Oil - 1 tablespoon
Oil - 45 milliliters
Garlic - 1 tablespoon
Onions - 50 grams
Carrot - 50 grams
Bell pepper - 150 grams
Broccoli - 50 grams
Prepared spinach puree - 100 grams
Mint sauce - 90 grams
Salt - 1 1/2 teaspoons
Black pepper powder - 1 teaspoon
PREPARATION
(Mint Sauce)
1. In a blender, add all the ingredients and blend it into a smooth puree.
2. Keep aside.
(For Spinach Puree)
1. Heat 1.5 litres of water in a potty dd 110 grams spinach and stir well.
2. Bring it to a boil.
3. Remove it from heat and drain them well.
4. Transfer this into a blender and blend it into a smooth puree.
5. Keep aside.
(For Pasta)
1. Heat 1.5 litres of water in a pot, add 250 grams penne pasta, 1 teaspoon salt, 1 tablespoon oil and mix it well.
2. Bring it to a boil.
3. Boil until the pasta is cooked through.
4. Remove it from heat and drain the pasta. Keep side.
5. Heat 45 milliliters oil in a heavy skillet, add 1 tablespoon garlic and saute for a minute.
6. Add 50 grams onions and fry till translucent or until it turns golden brown in color.
7. Then, add 50 grams carrot, 150 grams bell pepper, 50 grams broccoli and saute the veggies for 7 - 10 minutes.
8. Now, add 100 grams prepared spinach puree, boiled pasta, 90 grams mint sauce and mix it well.
9. Add 1 1/2 teaspoons salt, 1 teaspoon black pepper powder and mix it again.
10. Cook for 3 - 5 minutes on medium heat.
11. Serve hot.
