INGREDIENTS:
Muffins
168 grams (1 1/4 cup + 1 tablespoon) cake flour
3.6 grams (3/4 teaspoon) baking soda
2.4 grams (1/2 teaspoon) baking powder
4.4 grams (1 1/2 teaspoons) kosher salt
24 grams (1 tablespoon + 2 teaspoons) sour cream, room temp
7 grams (1 1/8 teaspoons) vanilla extract
144 grams (3/4 cup) light brown sugar
120 grams (4.2 oz) unsalted butter, room temp
80 grams (1/4 cup + 1 tablespoon) eggs (about two whole eggs)
256 grams (1 cup) granny smith apples, very small dice
Streusel Topping
1/4 cup unsalted butter, cool
1/8 tsp salt
1 1/2 teaspoons cinnamon
1/2 cup all-purpose flour
1/4 cup brown sugar
1/4 cup granulated sugar
1/2 teaspoon nutmeg

500 grams apple (peeled & sliced) [around 4 cups]
1/2 tbsp [4 grams] cinnamon powder
1/3 cup [80 grams] unsalted butter
3/4 cup [150 grams] granulated sugar
1/8 cup [16 grams] cornstarch/corn flour (add up measurement if using all purpose flour)
1/4 cup [60 ml] water
1 egg (for egg wash)

2 cups [256 grams] all purpose flour
1/2 tbsp [6 grams] sugar
1/4 tsp salt
1/2 cup [115 grams] butter
7 tbsp [105 ml] ice cold water

Onion Pie | Classic Southern Recipe | Faye Thompson | @southerncooking
4 slices bacon
2 c chopped onions
2 large eggs, beaten
1 c sour cream
1 tbsp all-purpose flour
1/2 tsp salt
1/4 tsp black pepper
1 9-inch pie crust
Preheat the oven to 400°F. Fry the bacon in a skillet until crisp. Transfer the bacon to paper towels to drain. Drain most of the fat from the pan, leaving just enough to coat the bottom of the skillet. Add the onions and saute them until they are translucent. This takes about 3 minutes. Remove the skillet from the stove and let it cool.
Whisk the eggs and sour cream together in a small bowl. Wish in the flour, then the salt and pepper. Use a 9-inch pie crust. Prick several holes in the bottom of the crust. Spread the onion and bacon mix over the bottom of the pie shell. Pour in the filling. Bake for about 15 minutes. Lower the oven temperature to 350°F and back for another 15 minutes (or until nicely brown). Remove from the oven. Cut into wedges and serve hot. Serves 4 to 6 people. You may put this in a plastic bag and freeze it for up to 3 months.
Pie Crust
3 c all-purpose flour
1 tsp salt
1 c lard
1 egg
1/3 c cold water
1 tbsp apple cider vinegar
The flour and salt should be combined in a big bowl. To combine, stir. When the flour resembles coarse crumbs, add the lard and mix it in with your fingertips. Once the dry ingredients are moistened, combine the egg, water, and vinegar. Divide the dough into three balls after forming it into a ball. On a floured surface, flatten a ball into a disk and roll it out to a thickness of 1/8 inch. Trim the dough's edges to leave a 1-inch overhang, then fit it into a 9-inch pie pan. Crimp the edges and fold the dough under.

Jika 1 resep itu jadi 53 buah, maka harga modal per 1 pcs Pie Buah adalah Rp. 1.116. Dengan begitu harga jualnya itu adalah sekitar Rp. 2000 s/d 2500 saja. Ini tanpa menggunakan susu bubuk di adonan kulit dan creamer bubuk di adonan Vla ya Guys. Jika menggunakan ke dua bahan tersebut, kemudian adonan kulit pienya juga ditambah 1 butir telur, lalu kemasannya juga dialas dengan paper cup, maka harga jual bisa naik jadi Rp. 2500 s/d 3000 per pcs. Ini hanya estimasi saja, jika modal total kalian lebih mahal, silahkan disesuaikan lagi harga jualnya ya. Intinya sesuaikan harga jual dengan modal total yang kita keluarkan, juga pangsa pasar yang kita target. #CATAT
NOTE: untuk kulit pie, agar lebih kokoh lagi, kita bisa menambahkan sekitar 2 sdm tepung maizena ya. Hasilnya lebih renyah dan crunchy.
