How To make Eating Well's Parmesan Straws
1 Large egg white
1 tb Olive oil
1/4 ts Salt
1/8 ts Cayenne (optional)
6 Sheets phyllo dough 14"x18"
3/4 c Freshly grated Parmesan or
-Asiago cheese Preheat oven to 400 degrees F. lightly coat 2 baking sheets with non-stick cooking spray or line with parchment paper. In a small bowl, whisk together egg white, oil, salt and cayenne, if used. Lay a sheet of phyllo on a work surface with the short side toward you. Keep remaining phyllo sheets covered with a plastic wrap or waxed paper. With a pastry brush, lightly coat the lower half of sheet with the egg-white mixture and sprinkle with about 2 tsp. cheese. Fold the upper half over the lower half. Brush the right half of the folded sheet with egg-whit mixture, sprinkle with a heaping teaspoon of cheese and fold left half over the cheese. Brush the bottom half of the folded sheet with the egg-white mixture, sprinkle with 1 tsp cheese and fold the upper half over lower half. Finally brush the top with the egg-whit mixture and sprinkle with 1 tsp. cheese. Cut into ten 1/2-inch strips using a knife or a serrated pastry cutter. With a wide spatula, transfer the strips to the prepared baking sheet, placing them about 1/2 inch apart. repeat the procedure with the remaining 5 sheets of phyllo, egg-whites and cheese. Bake the straws for 8 to 10 minutes, or until golden and crisp. Transfer to a rack to cool. Makes 5 dozen straws. Note: The straws may be stored in an airtight container at room temperature for 1 week or the freezer for up to 2 months.

Parmesan Cheese Straws with Homemade Marinara Sauce
Parmesan Cheese Straws.
INGREDIENTS
1 Sheet puff pastry thawed from a 17 1/4 ounce package.
1 Tbs of water.
1 Egg.
1/2 cup grated parmesan cheese.
1/2 tspn of red pepper, cayenne
DIRECTIONS
1. Add water to egg and beat. Set egg wash aside.
2. Unfold puff pastry on a lightly floured surface. !!!IMPORTANT - FLOUR SURFACE LIBERALLY!!!
3. Roll into 14 x 10 inch rectangle.
4. Cut pastry in half lengthwise.
5. Brush both halves with egg wash.
6. Sprinkle 1/4 cup grated parmesan and 1/4 tspn red pepper evenly over one half of the divided pastry, reserving the other 1/4 of cheese and pepper for later.
7. Cover with remaining half of pastry, egg washed side facing down.
8. Gently roll with rolling pin sealing both side of pastry together.
9. Cut pastry into 3/4 inch strips across the width, 16 to 18 strips.
10. Brush strips with egg wash.
11. Sprinkle strips with remaining 1/4 cup parmesan and 1/4 tspn red pepper.
12. Grease baking sheet liberally.
13. Place strips on baking sheet 2 inches apart, pressing down ends of pastry strips to baking sheet to secure.
14. Place in preheated 400°f oven for 10 to 12 minutes or until golden brown.
15. Serve and enjoy!!! :-)
Homemade Marinara Sauce
INGREDIENTS
2 (14.5 ounce) cans stewed tomatoes
1 (6 ounce) can tomato paste
3 Tbs chopped fresh parsley
1 tspn garlic, minced
1 tspn dried oregano
1 tspn dried basil
1 tspn salt
1/4 tspn ground black pepper
2 Tbs olive oil
1/3 cup finely diced onion
1/4 Cup white wine
DIRECTIONS
Add all ingredients to blender and blend thoroughly. Refrigerate for later use... :-)

Easy Cheese Straw Recipe - Parmesan Peppercorn Cheese Straws | Crowd Pleasing Easy Party Recipe
Cheese straws are one of the easiest and best of all appetizers for entertaining a crowd. It's the perfect last minute recipe for a party, or just to make a weeknight dinner special. If you wish, provide warm marinara sauce or a cold dip for dipping.
Parmesan-Peppercorn Cheese Straws

Flour for dusting
1 sheet thawed frozen puff pastry*, preferably all-butter
1 large egg, beaten until foamy
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon black peppercorns
¼ teaspoon minced dried garlic (or garlic powder, no need to grind)
⅔ cup/50 g freshly grated cheese, such as Parmesan or Romano (or a combination; use a box grater)
Using a FinaMill, grind the basil, oregano, peppercorns, and garlic into a small bowl. Add the cheese and mix well. Sprinkle the mixture evenly over the pastry and press gently with your palms to make the mixture stick.
Lightly flour a work surface. Unfold the thawed pastry onto the surface, long side facing you. Pat and press on the pastry to smooth out the creases. Lightly brush the top of the pastry with some of the beaten egg.
Line a large baking sheet with parchment paper or a silicone baking mat. Using a ruler and a pizza wheel or large knife, cut the pastry crosswise into evenly into 12 equal strips, each about 1 inch wide. (It works best to draw the pizza wheel towards, not away, from you.) Transfer the strips to the baking sheet. Refrigerate to chill and firm the pastry, 10 minutes or up to an hour.
Position a rack in the center of the oven and preheat to 375ºF/190ºC. One at a time, hold a strip at both ends and twist in opposite directions to make a spiral. Space the strips apart on the prepared sheet, pressing the ends onto the sheet to discourage unwinding.
Bake until puffed and golden brown, 15 to 20 minutes. Let cool until warm or room temperature and serve. These are best served the day of baking.
* Most frozen puff pastry comes in a box one large or two smaller two sheets, so save the remaining pastry for another use, or double the recipe to make 24 straws.
