Overnight French Toast Casserole- Rise and Shine Breakfast - Episode #74
Overnight French Toast Casserole
1 lb French bread, cut into 1” cubes
Custard:
8 eggs
2 c milk
3/4 c heavy cream or half & half
2 t vanilla
Topping:
1/4 c flour
1/4 c brown sugar
2 t cinnamon
1 stick of butter shredded or cubed
Spray 9x13 pan with non stick spray.
Put cubed bread in pan.
Whip eggs, sugar, milk, heavy cream & vanilla until smooth and creamy.
Pour onto bread and stir to coat.
Cover with plastic wrap. Refrigerate 12-24 hours.
Mix topping until crumbly, cover and refrigerate.
Preheat oven to 350*
Take Casserole out of refrigerator and uncover. Spread topping on top of casserole.
Cover in foil, bake 30-40 minutes. Test with knife once the knife comes out clean it’s ready.
Serve with maple syrup.

FRENCH TOAST
• 1 large day old bread loaf like brioche, challah, crusty sourdough or French bread, see notes
• 6 whole eggs
• 1 cup whole milk
• 1/2 cup heavy whipping cream
• 2 tablespoons real maple syrup
• 1 tablespoon vanilla extract
• 3/4 teaspoon ground cinnamon
• 1/8 teaspoon ground cardamom
• 1/8 teaspoon fresh grated nutmeg
• 1/4 teaspoon fine sea salt
• 2 tablespoons butter plus more for greasing pan
• Optional toppings: Maple syrup, honey, powdered sugar and fresh berries
CINNAMON SUGAR TOPPING
• 1 tablespoon granulated sugar
• 1/2 teaspoon ground cinnamon

Vinnie's Vittles Overnight French Toast Casserole
Overnight French Toast Casserole
Ingredients
12 slices of Texas Toast or any thick bread
1 stick of butter (half melted, half cut into pats)
1 1/2 cup milk
3 eggs, well beaten
1 teaspoon Vanilla extract
1 cup brown sugar
1 teaspoon cinnamon
14 teaspoon nutmeg
1/2 cups chopped pecans ( or desired type of nuts)
Melt the butter and pour into a 9 x 13 casserole. Tear or cut bread into bite size pieces. Mix brown sugar, nutmeg, cinnamon and nuts together in a separate bowl.
Pour the melted butter into the casserole dish, then top it with half of the torn bread pieces. Sprinkle the sugar, spice mixture on top reserving half for the next step. Layer on the remaining bread and top with the left over sugar topping.
Beat the eggs, milk and vanilla together and pour evenly over the casserole. Cover with plastic wrap and refrigerate overnight.
In the morning, cut the remaining butter into pats and top the casserole with them. Bake, covered with foil at 350 degrees for 25-30 minutes, uncover and bake an additional 25 to 30 minutes or until golden brown.
Serve with maple syrup or the cream sauce show in the video.
Maple Cream Sauce
Ingredients
1 cup of pure maple syrup
1/2 cup heavy whipping cream
2 Tablespoons butter
Mix together in a sauce pan, bring to a light boil, turn temp down to low and simmer five minutes. Allow to cool slightly before serving.

2 eggs
60ml milk
1tbsp white sugar
1/4tsp ground cinnamon
A pinch of salt
Mix well
2 slices of bread
Cut off the crusts (optional)
Medium-low heat
1tbsp unsalted butter
Pour the egg over the bread
Flip over and cover with the egg
Repeat
Pour the rest of the egg
Soak the egg mixture with the bread
Place in the frying pan
Shape the bread with the spatulas
Flip over
Fry the sides
Done!
Maple syrup
So fluffy and delicious!

✅ BLUEBERRY FRENCH TOAST CASSEROLE INGREDIENTS:
➤1 loaf (14- to 16-oz. loaf) day-old sourdough bread French bread, brioche, challah, or similar, cut into 1-inch cubes (about 12 c)
➤1 1/2 c blueberries, fresh or frozen
➤8 large eggs
➤2 c unsweetened vanilla almond milk or milk of choice
➤1/3 c pure maple syrup
➤zest of 1 large lemon (about 1 tbsp)
➤2 tbsp freshly squeezed lemon juice
➤1 tbsp pure vanilla extract
➤1/2 tsp ground cinnamon
➤1/8 tsp kosher salt
➤For serving: powdered sugar, maple syrup, butter
✅DIRECTIONS:
1. Coat a 9×13-inch casserole dish with nonstick spray. Arrange the bread cubes (see notes if the cubes are still very soft or fresh) in an even layer in the pan, then sprinkle the blueberries over the top. Set aside.
2. In a large mixing bowl, whisk together the eggs, almond milk, maple syrup, lemon zest, lemon juice, vanilla, cinnamon, and salt. Pour over the bread. Cover the pan tightly with plastic wrap and place in the refrigerator overnight. (If overnight is not possible, I recommend a minimum of 2 hours).
3. When ready to bake, remove the pan from the refrigerator. Place a rack in the center of your oven and preheat the oven to 350 degrees F. Bake, uncovered, for 45 to 55 minutes, until lightly golden brown on top and the bread in the center is moist but no longer liquidy. Serve hot, dusted with powdered sugar and topped with butter and maple syrup, as desired.
