How To make Easy Italian Sausage Vegetable Soup
1/2 pound bulk italian pork sausage
1 cup carrots
sliced
1 large baking potatoes :
peeled, 1/2" cubes
1 clove garlic -- minced
2 cans ready-to-serve beef broth 14 1/2 ounce
1 can garbanzo beans :
drained
1 can pasta-style chunky tomatoes 14 1/2 oz. undrained
1 1/2 cups water
1/2 teaspoon dried italian seasoning
1 bay leaf
1 cup zucchini :
julienned
fresh parmesan cheese -- grated
Prep Time: 15 minutes (Ready in 7 hours 45 minutes)
In large skillet, brown sausage; drain. In 3 1/2 to 4-quart slow cooker, combin e cooked sausage and all remaining ingredients except zucchini and cheese; stir gently to mix.
Cover; cook on low setting for 7 to 9 hours.
Remove bay leaf. Gently stir in zucchini. Cover; cook an additional 30 minutes or until zucchini is tender. To serve, ladle soup into bowls; sprinkle with che ese.

You know I love a collaboration and I love soup so what could be better than a whole month of great channels making terrific soup recipes? Here's a fun way to start the fall season with some delicious soups!
Here's the ingredients used for this soup.
1 Tablespoon Oil
2 large onions chopped
3 medium carrots chopped
1 green pepper chopped
2 garlic cloves chopped
1 1/2 pounds red potatoes chopped
32 ounces beef broth
1 package of sausages. ( I like Hot Italian)
1 28 ounce can of whole tomatoes
1 teaspoon Worchestireshire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cayenne pepper
1. Cook sausage in oil until cooked through. Remove to drain on paper towel.
2. Saute all chopped veges until tender
3. Add potatoes, mix into other veges
4. Add broth, tomatoes and spices
5. Simmer for about 30 minutes until potatoes are tender.

Italian Sausage Soup -- Fast and Easy Italian Soup
Italian Sausage Soup
Ingredients
• 1 pound Italian sausage
• 1 small onion diced
• 3 tsp minced garlic
• 4 cups chicken broth
• 15 ounces canned white beans drained and rinsed
• 14.5 ounce canned diced tomatoes with juices
• 3 carrots peeled and sliced
• 2 stalks celery sliced
• 1 red bell pepper chopped
• 1 cup tomato sauce
• 1 cup tomato juice
• 1 ½ teaspoons dried Italian seasoning
• 1 zucchini sliced
• 1 cup medium pasta uncooked, penne, rotini or shells
• 1 cup packed fresh spinach
Parmesan cheese as garnish
Instructions
1. Brown Italian sausage in a large pot until no pink remains. Drain fat.
2. Add onion and garlic and cook for 3 minutes or until onion begins to soften.
3. Stir in broth, beans, diced tomatoes, carrots, celery, bell peppers, tomato sauce, tomato juice and Italian seasoning. Bring to a boil, reduce heat to simmer. Cover and cook for 8 to 10 minutes.
4. Add the zucchini and cook an additional 6 to 8 minutes or until vegetables are tender. Additional broth can be added If needed.
5. Meanwhile, cook the pasta to al dente according to package directions. Once cooked, drain well and rinse under cool water. Set aside.
6. Once vegetables are tender, stir in the spinach and cooked pasta. Cook until heated through and spinach is wilted, about 2 minutes. Garnish with parmesan cheese if desired, and serve immediately.
